Research and extension work at Cornell over the last decade has developed cultivation practices and economic models for log-grown shiitake mushrooms. On-farm research found that growers can be profitable in year two and net $9,000 over a five year period with a 500 log operation. Of course, "profitable" is relative to how one designs a production system to be efficient and if local markets are secured.
