Good analysis, There are some...curious...choices they made with this new sheet. I agree that having all the skills on the sheet is SO much better than not. Especially when you call for a skill check that many players might not have. At least one the old one they can immeditally tell which stat is supposed to be rolled. I still hate the way the skills on the original sheet was organized. I found that by redoing it, and putting them all in strictly alphabetical order, players can find the skills so much easier. The categories the original sheet have are confusing to newer players, as those categories have no game mechanic bearing. I redid the character sheet doing purely alphabetical and my players loved the new sheet.
I personally didn't mind having the various categories as it gave the sheet its own personality. Having all the skills in alphabetical order would remind me a little bit of Dungeons & Dragons 3.5 (my first TTRPG I played in 2017) sheets where you have this hodgepodge of skills that it could be a little bit harder to read what's going where.
