Egg Bread is an enriched bread, which means it contains eggs and butter. It is a beautiful bread with its glistening golden brown crust and its three strand braid. Inside this white bread has a buttery rich flavor and a soft texture. It's delicious buttered. It's a great bread to use for sandwiches and it makes delicious toast. It can also be used to make bread pudding.

I can't wait to make this. I've been following Joy of Baking for many years and very rarely bake from any other recipes. I am adjusted to Stephanie's incredible way of explaining recipies, methods and options and every single thing I bake turns out the way that it should - even if I have made slight flavour modifications (e.g. adding lemon curd to the pound cake recipe or caramel to chocolate cupcakes etc). I bake for my family, friends and work colleagues and everything always goes down a treat. JOB has helped me stay busy during lockdown/furlough leave too, keep up the good work guys. all i can say is i love joy of baking, i wont forget all my life becoz of this channel, i know how to bake cakes now and my 4 kids from 18yo,17yo,12yo boy and my 6yo cutie loves all ur recipes, 26 of this month is the bday of my 6yo girl, i will make butter cake one of her favorite😊 keep safe always maam. Been wanting to make egg bread for a long time...I think the time is now!! You increase my "bread baking confidence"....which I so need...knead 🍞 And I have a digital scale! Yay! Yes you're right it is gorgeous. I just cannot make bread but i really love trying, it mostly ends up being thrown out for the birds. You would think with all the practice i've had that i would have cracked it by now. Thanks for sharing your great recipe Stephanie. Take care lovely lady

This looks like an absolutely wonderful bread recipe. I have never done a "pre-ferment" and I can imagine the flavor is enhanced by leaving it overnight. I'm definitely going to try this recipe. Thank you Stephanie!

Thank you Stephanie for another great recipe. I look forward to your video every Friday night. (In Australia). I have been getting a lot more adventurous with my baking since I discovered you. I currently have whole wheat bread aging in my fridge overnight to be baked tomorrow. I find a long fermentation in the fridge also helps with digestion. Thankyou.

So nice bread. I usually do double ciating with egg. The first one right after the final shaping. And another coat before baking. This will give a lovely rich color to the bread and shiny.

Thank you for including the actual speed numbers for the mixer ! So many chefs just indicate medium or medium high - this takes away any doubt regarding the speed setting to use !

Wet stuff in the mixer first helps a Lot with keeping the dreaded dry spot in the bottom of the bowl away. Less going elbow deep and trying to scrape.

Hi Stephanie I bake this beautiful Egg bread today ,however my dough came a bit sticky so i kept kneading for 45 mins by hand until it came less sticky,I have a very old machine but it couldn't hold the flour dough. My bread came out so good and soft thankyou thankyou, I'm obsessed with all your recipes and the way you bake ,you are one in a million ,keep safe and well x

I love baking bread! Making Italian bread today for tonight's dinner but I wish I had time to make this instead. Next time for sure! Bread recipes that use a pre-ferment are so much more flavorful. I'm really looking forward to trying this one, it's so pretty! Thank you Stephanie!

Sound great, can't wait to try making it. But it sounds like it is a lot of work to make it. Should be great for bread pudding. Only used regular bread before however sounds as if this would make a much better bread pudding. Thank you for going into so much detail it is very helpful.

After leaving my preferment on the counter all night, I decided to scrap it and follow the recipe exactly. I wasn’t sure if not refrigerating it would matter all that much. So, exact it is. My first real attempt at this bread has started. It’s always an adventure. Can’t wait.

My second attempt turned out wonderful. Lovely flavor & crumb that was perfect. I used bread flour & will find many uses for this recipe. My mind is wondering about the many ways I can incorporate this into our life. Nummmmy!

@Lois Southard Perhaps a bit of a recipe. But I consider my kitchen my playground and love to simply immerse myself in the joy of baking. Since the early age of 11 I’ve been exploring and enjoying different recipes. Many I only use infrequently, but most often, so enjoyable. Happy Baking!

Great bread! I love these egg breads. I make Tori Avey's Challah and it comes out perfect every time! Of course you can't use butter and milk in it if you keep kosher.. I personally don't but I just want that great flavour that EVOO gives to it and the honey and eggs. But the principle is the same and the result is identical. And it just makes the most flavourful bread! I just love your channel and the way you keep us smiling as we follow your recipes! Your Apple Pie is the BOMB! and the pie crust recipe is fool proof! BTW: please send a little of the Georgia warmth to you old Home Town... Brandon ! We're shivering up here! and we need rain!

I love this recipe and I use it for making cinnamon rolls .... and even for a potato bread if you add 1 cup of mash potatoes into the dough. Enriched bread it surely is.... Thanks for sharing this recipe, it makes the best dough for bread. It just takes longer to rise.

Beautiful... My doubt is about yeast. You have mentioned that the amount of instant yeast = active yeast. But in some website its mentioned 1 tsp instant yeast = 1.25 tsp of active yeast. Whats the difference? Love to hear your feedback on this..

Yes, there is differing opinions on that. To tell you the truth I've only used instant yeast in making this bread. You could use the 1.25 teaspoon for 1 teaspoon instant yeast and then see if you like the results.

It looks amazing!! I never made bread and want to really try this. Can I use all purpose unbleached flour instead? Also how much did the eggs weigh in ounces. My scale doesn’t have grams. Love all your recipes!!Thank you.

You could use AP Flour. For the conversion 1 ounce is equal to 28.35 grams. You can google "gram to ounces conversion" to get a conversion table.

@John Arrow I love to use egg bread for bread pudding. It’s a favorite in my large family for French toast, or simply cinnamon toast. Often I must bake a second loaf because it’s difficult to have enough on hand, for little munchkins seem to grab this lovely bread for a snack after school. Happy Baking!

Hi Stephanie, there is a typo in the recipe for the Pre-Ferment. It says "2/3 cup (75g) cold filtered water" but in the video you only used 1/3 cup (75g). I followed the recipe with 2/3 cup of cold water and the flour mixture was too watery. I ended up doubling the recipe to get the right texture.
