A simple & quick, yet delicious Egg Curry that pairs well with Roti, Rice, Parota, or Appam.
Ingredients:-
Eggs - As per your requirement, here I have used 8 nos
Coconut Oil - 2 tablespoons
Mustard seeds - 1 teaspoon
Crushed / Chopped Garlic - 1 tablespoon
Crushed / Chopped Ginger - Half tablespoon
Green Chillies - 3 to 4
Onion - 1 large or 2 medium sized
Curry leaves - few
Turmeric Powder - Half teaspoon
Kashmiri Chilly Powder - 2 teaspoons
Coriander Powder - 3 teaspoon
Spicy Red Chilly Powder - Half teaspoon
Garam Masala Powder - 1 teaspoon
Hot Water - 1 Cup
Thin Coconut Milk (while extracting the milk from coconut, keep aside the first milk & use the 2nd & 3rd thin Coconut milk) - 1.5 Cup
Thick Coconut milk (Use the thick coconut milk which was kept aside) - 1 Cup
Fennel Seeds Powder - 1 teaspoon
Coriander leaves - Few
