This emerald jam is a kiwi jam recipe! A delight! Quick jam to make. Perfect on a piece of toast, in a pastry such as pancakes, muffins, pies, cake, yogurt etc. The skin of the kiwi can be eaten but here there is no use. If you use agar-agar instead of pectin, you can lower the amount of sugar, but the jam will be more acidic. Good tasting !

Ingredients :
500 g kiwis (6 kiwis)
500g unrefined sugar - 2 cups + ¼ cup
Rind and juice of 1/2 lemon
75 ml of pectin (if you don't have any, you can add agar-agar or
gelatin powder - about 1 tbsp) - ¼ cup + 1 tbsp
Optional: green food coloring or spinach juice
