“Crunchy” is cracking me up! I wish I was allowed to see a chiropractor sometimes and if I could I’d definitely travel to the US to see him. I think he would say “crunchy” a lot for me.

I looked into it. It measures a temperature difference between the left and right sides of the probe. This temperature difference is perceived as an indication of inflammation due to spinal misalignment.
I'm no expert, but from what I've gleamed, often TMJ results in (or maybe results from, not sure) the jawbone drifting horizontally upon opening and closing of the mouth. I think the painful part is that when setting/correcting the issue he pushes against the drift in order to bring the joints back to a smoother, more vertical motion. He's basically forcing the jaw to move against its "preferred" path towards a more natural/functional/correct path of movement.
