Me and my 16 yr old granddaughter made these tonight, and the Empanadas came out so good. I didn’t use shortening. I used leaf lard. So the crust was delicious. I’m not and IG and you are not on Twitter so I can’t send you a pic. Thank you for the recipe.

I’m a big pumpkin everything but I’m all about some pumpkin pie. I make it with pumpkin of course, sweeten condensed milk, and eggs. Of course cinnamon and nutmeg yum!!! I also make a pumpkin flan that is to die for!!!!

I like da idea fo use da tortilla press. I remember my mom using a glass for a cookie cutter. And fo my brother's wedding she made eggplant empanadas and spinach ones. And my brother's future wife who is not Mexican and didn't know how to cook, helped my mom and sister make hundreds of them over da days and freeze em. 😁 Dey were muy sabrosas 😋 Suenos con angelitos 😴😇

So awesome!!! Just confused about one thing, with 'baking' usually you want to knead the dough as little as possible for a tender crust, how can it stay tender kneading it well like with Tortillas??? LOVED the very end!!! Lolol. Many times I DO watch before bed! 💕

Of these look so good!! I've only ever had empanadas from the grocery store or Bakery and they were horrible. No flavor in the dough and just dry usually pumpkin or something in the middle. These look fantastic! I definitely want to try them baked, but I'd also like to try a couple deep fried cuz yanno, I'm from the south. LOL I imagine deep-fried they're just more a hand pie than empanada though really, but I still want to try some of each.

Just discovered your channel and love it. Love empanadas but just got into cooking them myself. To say it’s a work in progress is an understatement. I see you’re in Denver and I’m at 7500 feet so altitude adds an additional issue. Any suggestions. I did discover one thing that works well with the tortilla press. Press down slowly an hold for a few seconds which helps with contraction. For a second press rotate the disc 180 degrees, press slow and hold again which creates a disc completely even in thickness.
