Here is a wonderful recipe created by our visiting chef from the Blackfeet Nation, Mariah Gladstone of Indigikitchen! A very delicious and simple recipe for Enchilada Sauce, utilizing Indigenous ingredients, you can use the next time you would like to make enchiladas. This Enchilada Sauce can also be combined with another recipe video we will be sharing on our channels tomorrow, keep an eye out for it! 🙂
Ingredients:
1 tsp oregano
1/2 tsp garlic powder
1 tsp chile powder
1 tsp cumin
2 tbsp tomato paste
1/4 cup masa (corn flour)
1 cup vegetable broth
Cedar smoked salt to taste
2 tbsp oil
Directions:
Place a medium pot on the stovetop and set heat to medium, pour in the oil
Test the heat of the oil by sprinkling a pinch of masa on top, if it sizzles, it is ready
Add all of the dry ingredients into the pot
Use a whisk to stir everything together, whisk until fragrant, continually keeping it moving
Add vegetable broth and tomato paste, continually whisking together till there are no clumps left
Turn the heat down and let it simmer
Add cedar smoked salt to taste
Once it has thickened, remove it from heat, and use in recipe or let cool before storing it in a container
