made the mexican gravy, it is a winner. reminds me of the tex mex joints in texas.

I believe the brown sauce a little old Mexican gramma served me with tamales was that enchilada sauce. Planning tamales for tomorrow. Will make that sauce and see. Have never been able to recreate her sauce.

I actually like Mexican Rice...I'm going to try it...and I literally LOLd at "And it's NOT WINE". LOL. Amen!

This is backwards, total rookie recipe. Make a roux - heat oil, add dry ingredients, stir, add liquid, stir and it will thicken. No lumps.
