The lovely gentleman that is Gennaro Contaldo. I was lucky enough a few years ago be taught a pasta class by him. His picture is on the kitchen wall, “why I cooking soo good!”. I never buy pasta anymore, only homemade. Cheers for this Mr G after a long day at work.
When I see how slowly you cut your ingredients, how carefully you add them in your recipe, with how much love you prepare everything and how happy you are while tasting your concoctions, it makes me remember what cooking is all about.
My mother use to make this salad for me as a child and I've been eating it my entire life. She uses apples instead of pears, Roquefort for the cheese, and lemon instead of vinegar. It's delicious, but I think you sold me on the pears, I can imagine they are even sweeter and come balance this dish in an even more interesting way. Gonna try that today! Thank you:)
