Pork ribs are a very popular ingredient on the Chinese dinner table. Steamed at a high temperature with garlic and black beans, the ribs have a rich flavour and are a simple but very nutritious dish.

Ingredients
500g Pork Ribs
1 green onion
1 garlic
1 Ginger
1 Chilli
1 tbsp cooking wine
1 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp cooking oil
1 tbsp corn starch
2g white pepper
10g Douchi (fermented black soybeans)
2g salt
5g sugar
Recipe:
1 Wash the pork ribs and drain the water.
2 Cut the spring onions into small slices, dice the ginger, cut the chillies into small slices and crush the garlic into minced garlic.
3 Add 1 tbsp cooking wine, 1 tbsp soy sauce, 1 tbsp oyster sauce, 10 g douchi (fermented black soybeans), 2 g salt, 2 g white pepper, 5 g sugar and add the chopped garlic, chilli and diced ginger, mix well and marinate for 20 minutes.
4 Place the marinated pork ribs on a plate and arrange them evenly, ensuring that they are not stacked on top of each other as they will not steam easily.
5 Place a sufficient amount of water in a steamer, add the pork ribs, turn the heat up to high and bring the water to a boil, then turn the heat down to medium and continue steaming for 20 minutes.
6 Sprinkle some chopped spring onion on top of the pork ribs for garnish and enjoy!
