This was absolutely delicious! The only thing I did differently is to put the potatoes on the bottom of the tagine, with the carrots, so that they’ll cook faster. I also spread some of the charmoula on the bottom of the tagine before adding the veggies.
Love tagine. Been in morocco 3times and best ones are in villages in the middle of nowhere at Atlas. One of best out of morocco was in Amsterdam, some moroccan restaurant, fish (unknown) with skin, half cut, only soft parts left, picled citruses and olives, salt, possibly little bit of muskatel nut (nutmeg) & salt, possibly parsley... not sure. Taste like heaven. Best tagines just after ramadan, as I have found. I definitely want tagine pot.

this is cooked in a tagine, which is based on slow-cooking. Tagine pot recycles the steam inside, therefore, food does not dry out. you can also plate this in a baking dish, cover with foil, and bake in the oven for 40 minutes.
