材料:
菜乾六十克(如邋遢,要切走菜頭,浸半小時水,切段)
紅蘿蔔四百克(滾刀法切段)
豬骨一斤(或可以用豬𦟌或豬肉,切細舊)
雪耳一大朵(浸一小時後切段,除去硬塊)
粟米兩條(切段)
果皮兩片
蜜棗兩粒
無花果三粒
猴頭菇一個(要浸一小時後,切段, 再浸四至五次, 除去噏味)
羅漢果半個
玉竹四十克(浸軟洗淨)
南北杏三十克
清水四千五百毫升

Being a cantonese myself doesn't really know how to make soup though I'm a big fan. Thank you for teaching me my favourite soup! I will make this when I can find 菜乾 in the chinese glocery, but I don't recall seeing 猴頭菇 anywhere :(

***** You are welcome. Hope you like it. 猴頭菇 can be omitted If you can't find it. It still tastes good without it. Maybe you can ask the shopkeeper for help.

Juan Zhang 你好!菜乾如果太舊煲湯會帶少許酸味,如果在香港街市有些散裝賣,可以拿來聞下,如果有菜香味便可以買,包裝便妾看看菜梗顔色是白色,應該都可以的,多謝收看😊

Every time I boil this recipe, the soup is *very sour* because of the 菜干 vegetables. Is there any way to remove the sourish taste?

If the dried vegetable is too whitish in colour it probably has been bleached with sulphuric dioxide

Joanna To 揀豬肉真係要撞手神,因為用任何方法都不能除去豬肉膻味.如豬肉膻的話就唔好要了,唔係嘥咗煲湯.

雪耳和玉竹怎麼要出水??! 出水會失去好多滋潤物質! 研究發現好多食物係不用出水,奇怪中式煮食為何咁多煮食要出水,流失唔少食物本身營養

你好👋現在的藥材,都會用一些防腐劑或添加劑,另食物達至美觀和完美,這樣才可買到可觀的價錢,所以藥材買回來後,除了浸洗,我都會將它過吓滾水,希望將不想要的添加劑剔除,這樣才吃得安心些囉!這些都是我提供給大家參考的,如果你覺得不需要這樣做,都是個人喜歡,自己決定好了,謝謝支持😊👍💕
