I googled for 大醬. The results showed Korean doejang. Is that correct? The video shows that is black, but korean doejang is kaqui-brown. Which one should i use? Can i use doejang?
In my experiance, 大醬 and doejang taste similar and the pronouncation is the same. Both are soybean paste. Difference is in salt/sugar level. You might need to adjust the taste.
