50% whole wheat toast
Whole wheat flour 150g
High gluten flour 150g
water 165g
Whole egg liquid 50g
Brown sugar 10g
Salt 6g
Low sugar tolerant dry yeast 3g
Olive oil 20g
Fermentation environment:
Temperature 30-38℃, humidity around 75%,
Baking temperature (resistant to low sugar mold)
Gobic t60s wind stove oven 175℃ 21 minutes
Cass 750s open-hearth oven, upper heat 180℃, lower heat 210℃ within 25 minutes
