Guys saying stuff in comments, it is this simple. If you buy a bike that is sold as 250w, and you de-restrict it then it is your own fault and no one else's if you get caught. It is the same with a moped than is restricted to 28mph and someone decides to de-restrict it so it can do mid 40s. If someone is riding one that still has the restriction it is ok, if someone is riding one that is not restricted it is not ok. The cops are not into de-restricting bikes, never have been. On top of that, it is a good idea to have a web link showing a site where it states it is legal and is 250w so if cops start asking you can tell them to do one.
