What's weird is that rarebit came up as a plot device in 1960s American sit-coms. The trope is that it gives you vivid/trippy dreams. I should research the origin of the modern myth.

It seems it should be grilled on top? Looks nicer and tastes more developed.

A really hoppy beer like an IPA is a no go here. You want a malty low IBU beer. Hops will make it unpleasantly bitter.
