= AGED STEAK TACOS WITH ROASTED VEGETABLE SALSA =
INGREDIENTS
1 beef fillet steak
plain flour
corn flour
yeast
2 tomatoes
3 cloves of garlic
1 red pepper
1 lime
1 red onion
2 red chillies
salt & pepper
coriander
white cheese (I used feta)
METHOD
This dish consists for three parts - salsa, tortillas and assembly… so I have broken down the recipe to make it easy.
Tortillas
Usually I would use Masa Harina (Mexican style corn flour) as I can’t get it in Montenegro I made up my own. Depending on the amount you want to make adjust your recipe. This recipe makes about 6 tortillas.
2 cups all purpose flour
2 cups corn flour
a pinch of salt
1 ½ cups of water
1 teaspoon of salt
2 teaspoons of yeast
1 teaspoon of olive oil
Mix all ingredients in a bowl, kneed the dough until it has a nice elastic feeling. 1 minute should do. Leave in a to rise for 30 minutes. Get on with the salsa and come back when it’s risen. Make some golf balls size balls from the dough then use a tortilla press (or your hands) to press into whatever shape you like. Dry fry your tortillas on a pan and keep covered with a tea towel before eating.
Salsa
Burn your tomatoes, peppers and garlic on the BBQ. It’s important to get a really good char on the vegetables. Remove some of the really burnt skin of the vegetables but NOT ALL. Leave enough so you will still taste the char. Use a mortar and pestle to break down the vegetables but don’t crush too much, you want a really chunky salsa. Chop red onion and coriander and add to the mix. Squeeze 1 fresh lime into the salsa, add salt and pepper and you’re done.
Assembly
Salt and pepper your steak, add to the pan. Get a really nice crust and keep the steak at least medium rare, don’t cook it anymore than that. Let the steak rest and slice. Add your steak, salsa, cheese, fresh chilli and coriander to the tortillas. Squeeze some fresh lime to finish it off. Enjoy on the beach! Simple.
