Veal Steak Sandwich with Beetroot Jam
To make beetroot jam add beetroot, orange juice, red wine vinegar, brown sugar, water and salt and pepper to a pan. Adjust vinegar and sugar for sweet and sour preference. Cook down for 15 minutes.
Salt and pepper your veal and sear on all sides. Add butter, garlic, rosemary and thyme to pan and baste the meat as you cook it. Wrap in tin foil for 10 minutes to rest.
Grill your bread in same pan with meat juices.
Put chilies and spring onions directly on the hot coals to char. Turn as required.
Add cheddar cheese to the pan and fry on both side.
Build that monster and enjoy it with a beer and something pretty to look at.
