@@hardassteel I don’t believe that to be true. Even the original nachos, they’re considered Tex Mex. They were indeed created by a Mexican fairly recently back in the 1940s. But only two miles from the Texas US border, in a club that was most popular amongst US tourists. Hardly call that an authentic Mexican dish, regardless of what spin you put on the dish Also, a whole lot of dishes have tostados. So that’s kind of irrelevant. Just because something has tostado in it doesn’t make them nachos. And no, I wasn’t talking about Taco Bell’s nachos lol. Was referring to real restaurant quality Tex Mex. The original.

Mexican food, in Taxas, beside from when prepared by Mexicans anywhere, was the best restaurant Mexican food I ever ate. Especially street food, that was good eats, in Lubbock. I'm so hungry now...

From San Diego area myself and it made me laugh to see Starsky try "loaded nachos" for the first time, without even knowing what guacamole was. Hint: Nectar of the Gods.) Remember back in the '60's when relatives from South Dakota visited and had never seen an avocado or even an artichoke. After a few days one said, "My, you sure eat a lot of Mexican food!" My Dad said, "This is California. Here we just call it food." For example, last night dinner was fish tacos (lots of cabbage and sliced radishes, squeezed lime, habanero, salsa, etc.), fresh-made corn chips, frijoles e arroz con queso., etc. Yum! That's real food!

Yes, just don't put TVP on it. If you want it vegetarian, use beans and omit the meat.

I never cook meat for it, I use whatever the leftover meat of the day is.
