those those are banded wrasse, I've shot several, nothing wrong with them, flesh all good, but they have big thick scales so good to descale them in the water if you remember to do so, and when you filett them, avoid the gut cavity as much as possible as there's lots of bones there. Other than that, wrasse are ok eating. Nothing fancy, but ok.
This is my friend Josh's Boat he had about 8 years trouble free with the last Parsun 30 until he drowned it n got this one a year ago. I'd buy one going by the reliability Josh has had with his, it seems good on fuel economy aswell.
you are right mate, those fish you were seeing and questioning about are "stripped wrasse" or also known as "banded wrasse" and actualy "very tasty to eat" with a large thick soft white flake, similar to butterfish.
Just an old gopro 7 silver that I put in a waterproof case, it's a pain as it has a built in battery so I cant swap batteries out and only get around 1 hour 20 of recording. I'm gonna upgrade soon to an 11 or 12 with a few spare batteries. I'd recommend atleast a gopro 7 Black so you can swap batteries and record in 4k quality 👌
