Great question. the main reason for it is to keep it away from dirt, dust and water. There is nothing wring with mounting your compressor under bonnet, It comes down to preference and whats easy. Best bit of advice we can give is: set up your air system so that its as easy as it can be to use. That way you will use it and lower you tire pressure every time your off road.
