I don't see, why is it better. I've been waiting for Joule too, but how long can you wait? I've bought Anova, and it's really great. Even better, because you can use it without phone.

The joule is a lot smaller than the Anova, but still more powerful. It's also got that magnet on the bottom and generally looks more well made. It's also nicer looking.

Well, its technically always been just Joule, because Joule just allows them to sous vide... which is what they've always done.

Why wait for joule? Are other sous vide devices not available? I often see comments on chef steps complaining about joule not being available, but I don't understand why anyone would want to wait for this one when there are similar available by other companies.

tdylan There are multiple reasons to buy Joule for me. First off, the guys and gals from ChefSteps seen nice enough that I'd like to support them. And Joule seems extremely easy to use, it has a nice design and a clever app. But maybe that's just me :)

My two favourite cooking educators in one place! Recently got sous vide and I am really liking the results. Steak, perfect every time (just need to work on the sear). Turkey breast turned out really well as well. Can't wait to experiment more.

My method: 1) I brine a frozen bird in a drink cooler, 2 days ahead (thaws while it brines!) 2) Spatchcock the thawed bird and rub it with olive oil. 3) Bake. Result? Crispy skin and juicy meat all the way through. No sous vide necessary. Got an oven? You're good to go! Oh yeah... the giblets, neck bone, and back bone, thems all gravy fodder.

If you're into immersion circulator cooking this method is great, I just use my Weber grill or convection oven to brown it up.

I intend on trying the sous vide method for my turkey this year. I usually smoke mine whole every year in a homemade smoker. The downside is you can't really make gravy when you smoke it. I'm assuming I can use those bag juices for gravy. My question is what time and temp do you guys recommend smoking the turkey at after I've finished the sous vide process? I have to transport this turkey for 2 hours and cant use the grilling/smoking method shown. I want to do it in my smoker and just be able to heat it up in an oven when I arrive.

to me the bag juices from sous vide cooking, especially from long cooking times, seem to have a kind of weird sour odor and flavor. It cooks off the food with finishing searing or grilling, but if I were doing this I would plan to make gravy separately from additional turkey legs.

yall ever notice that they don't really use jule unless their trying to sell it? they have that wall of immersion cookers in their kitchen, i see it in the video, and none of those look like jule.

Those are PolyScience MX Immersion Circulators. Those products are laboratory-grade, therefore expensive as cocaine. ~900 $/piece

I did look at that, the problem being that we have 200-240 volts, and joule is only being sold at 110 volts currently, and the converter needed is a expensive and b quite large, which would completely destroy the purpose of having a beautifully designed small circulator...

I'm new to Sous Vide, just got myself a Logic clip on unit, similar to the Joule. So far I've done Lamb Shoulder and Lamb Roll with fantastic results. I tried Pork Ribs, not so good, but I will keep going till I get it right. What I would like to know is, did you use the juice out of the bag for anything, or do you discard it??

The channel is becoming one dimensional. Let's all just assume that sous - vide, using Joule, will now be the default method for cooking proteins on this channel. A pity, but that's the direction to which the channel has taken the cooking of flesh, it probably wont be done any other way. That said, I don't see any reason not to resume baking videos, technical videos on food science and food preparation or videos on the making of drinks.

Actually.... Looking at their channel, only about 1/2 are sous vide (Joule). They just posted a video about shucking oysters. I think that much of the issue is RU-vid organization. This turkey video (Joule advertisement) showed up in my Suggested Videos, but the oyster shucking video didn't. Why? I don't know. On the whole the channel is still pretty good, but the paid promotion of videos selling stuff makes the channel look less appealing and this is due to RU-vid, not ChefSteps.

I kinda wish the first two minutes of this video wasn't a detailed explanation of what sous vide is and what Joule is. If you watch any Chefstep videos for the last year, you know about Joule, and I would hope you know how to use sous vide...

Tried it out, not super impressed but came out on. Still think deep fry is the way to go. But I will try it again. Maybe I didn't do it rite. Do love the stuff from chef steps l, so I'll keep trying

It's hard to compete with the deep fry flavor. You could deep fry it after doing the sous vide too. I did the sous vide followed by smoking it for 4 hours at very low temps (about 150F) for my thanksgiving dinner and was very happy with the results. It was the least stressful time I've had preparing a turkey. I got all my other side dishes done and right before I was ready to serve I threw the turkey on a hot grill to get some color. I love not having to wait before carving.

black grill marks indicate the temp was too high, spritz bars with a bit of lemon water to lower to ideal temp and not char lines too much.

I always wonder, Grant said you could cook the interior and then have the piece of meat chilled until you need it. Then give it 5 minutes on the grill. But the meat won't hit that internal temp of 130 anymore right? might as well just make it easier to overcook.

Pablo Schultz Your cold meat will still be cold after only five minutes on the grill. Don't take it out of the sous vide water bath until you're prepared to finish cooking.

I like it. It's refreshing. All these other channels are trying to sell us on pops and pans when sous vide is just easier and better. It's like if some old times medicine show came around trying to sell you leech blood letting therapy. Then real doctors were like, "how about something a little more modern?"

This may be the absolute tastiest way to prepare turkey, but the traditional roasting method is too important for my guests. My family would be unhappy even if they knew this method makes the most perfect turkey.

You can. But the temperature will be a bit complicated. he sous vide the dark meat and light meat separately because their temperature for sous vide is different due to their different texture and juiciness

Iain Meldrum the "clear juices" means nothing. it's essentially pasteurized. Safety is a function of time and temp.

I can respect one's petsonal way of cooking and how they want to run their business is theirs alone. But I'm here to mention that the cooking aspect of RU-vid is decently filled with other channels. And in support of my favorite cooking channel is Sorted, they show recipes and dishes that fun to watch enhanced by zany charismatic characters. Hit them up if anyone's interested.
