i could tell the front end was going to dive because of the kicker on the face of the jump so he kept the gas on in the air to prevent the bike to nose dive and that the rear tire hits the ground first before the front tire does to get on the gas faster

Yes, more throttle means the rear tire continues to spin. Sand is extremely loose and lots of friction. Keeping her pinned maintains your momentum and keeps the front end from digging into the sand
