By her mid-20s, she had worked in various levels of long-term care and completed her master's in gerontology.

I grew up on homegrown food, went to organic when it became available in the1990's, eat mostly meat, fruits and vegetables. Very little sugar and grains. I grow organically and save my own seeds. But, I still have to take various minerals, but no medications and I see the doctor seldom. I am in my 70's. I am happy to see that this information is coming into currant awareness. thank you John and Erin

If you do need a doctor, I recommend an MD trained in Functional Medicine. It's mostly about diet, microbiome, and micronutrients. Basically, what John does for soil.

Growing nutrient dense food is the entire focus of Steve Solomon's "The Intelligent Gardener". It's all about re-mineralizing the soil. He's the one who pointed me to this episode. John... he would make a great interview.

I’ll check it out. My favorite regenerative rancher, Greg Judy, gives his cattle Free Choice Enterprises minerals. The cows know what they need and take it themselves out of wooden bins. Each year they take less minerals because it goes into the soil from urine and manure. I think if farmers could rotate cattle into their fields with free choice minerals it would be good for the soil and consumer. But really we should just reduce corn and soy fields and increase regen cattle.

Great interview John. What Erin is doing is amazing and needs to be repeated all over the country. I hope there are some leaders in the insurance and hospital spaces listening. I live in Montana and we need both a higher level on knowledge by the consumers and availability of growers. Both are in very short supply. As far the podcast, I like the long form I get more out of them. The short form is useful when I am trying to learn about just one thing or topic. Thank you keep up the great work.

Erin should talk with Dr David Unwin , he's been reversing T2 Diabetes for a few years now using nutrition, not even nutrient dense food. So its not what they are eating its might be what they stop eating! The focus on Cholesterol is a bit out of date, Dr Malcolm Kendrik's book "The Clot thickens" gives some insight.

So many rabbit holes. What is the goal here? I hear the number of 150 people, how many fail and prefer the Twinkies? I hear A1c levels and lack of refrigeration. A carnivore or keto diet of canned fish and vegetables is able to lower A1c in a few months without even thinking about how the food was grown. I really didn't get a good grasp on what you wanted to accomplish. Knowing how to cook isn't something that should be learned in old age, it should be learned in childhood. Are your schools not teaching these things? If you want to be able to shop at Dollar general, shouldn't you ask dollar general to stock certain items to make it easy to become healthy in a standardized way? In nursing homes I have seen atrocious high carb meals served with little concern for health. There are companies that supply cooking and food services to these nursing homes, seems you could get more bang for your buck by helping these companies serve better food. As far as the regenerative side and better nutrients, I really didn't understand where that came into play here. Anyway... It's nice to know somebody cares enough to be doing something.

The main problems are, Experts: because of the agricultural "Science" we've turned farming into a soil/soul destroying production line of chemical solutions and mono crops. Experts: in food nutrition have pushed towards high carb, seed oils and highly processed foods and away from natural whole foods, demonised saturated fats and Cholesterol . Experts: in medicine only want to keep you sick, they have no cures know how to fix health issues, some of which shouldn't be there if we eat the right nutrient dense foods. Legislation,guidelines and corporations push a narrative of dependence, sickness and fear.
