Thanks for the Review...no doubt this is a departure from the Norm for us....like you stated it is thru a sister company Expat knives. We will be expanding the Expat line in the future. While it's not for everyone we've had fun with it and use it...I butcher all my own game meat and we hope to have a video of that later this hunting season.

Thanks for watching guys, I had a whole lot of fun with it. I could only speculate but more established companies doing more weird and wonderful things can only be good for the general world of knives!

Thank you....we've made hard use knives since 1997. Every now and then it's good to go outside our comfort zone and try something different. We know this knife isn't for everyone but few are....I'm looking forward to using it this coming hunting season!

I have a German Hinkle cleaver with a full tang that I beat the absolute crap out of while camping. It handles everything. When I get home I use course to fine grit sandpaper bring back the blade and shapen its perfect convex edge and put it back in the kitchen drawer for cooking

Distinctive tool but you are right that an ESEE 6 would be more versatile and weigh a lot less. This cleaver may go down in price with time--since it is a new item and priced for fanboys who can't wait to get it.... Keep up the great work. You have awesome videos on topics that are mostly ignored by other. The Australian perspective and humor is also appreciated.

The smudged coating contains magnetit particles, but I will ask a food chemist to be sure it is harmles. I use also Ballistol rather than WD 40 because I want to cut food with my knives. Edit: His answer was: Variations of magnetit and iron oxides are unappetizing but harmless.

@@terocool7625 iron oxide is harmless in food, it probably even is a source of dietary iron like you get from cast iron pans.

I use mineral oil for rust protection on food prep knives. I wipe it off thoroughly but no need to wash it off.

It looks fun, but a Victorinox Cleaver can be had for $30 and it makes a mess out of whole chickens very well (plus adds stainless performance). I do enjoy my ESSE 3 and 6 blades though.

I think its a fun concept for sure. But at the price Id take a Ontario SP8 over it everyday. You should review that oldie but goodie, SP8 btw.

mountainhobo Just speculating/wondering here but did the potato show dark spots like that when it touched the steel? I'm wondering if the onions are somehow reacting with the steel. Oxidizing or something like that? Would seem to me that if it was really a coating castoff that it would show up on everything you cut.

@John Smith - Onions are highly alkaline, so yes, I am convinced there was a reaction with the coating. That's one of the reasons I don't like any of those weird coatings. You never know what it is going to react to. I would definitely not use any weirdly coated / acid washed knife to prepare food. Let the mall ninjas show how stealthy their new cleaver is. Sorry if I am making fun of it, but coated cleaver for food preparation? Why? Is a carrot going to notice a reflection and report your position to the celery sniper?

Acid washing isn't so much a "coating" as it is a forced patina. As in, all non-stainless steels will oxidize, the acid etchant simply forces a sort of controlled oxidation. The results leave the steel a bit more resistant to further corrosion. As for what is showing up on those onions, it is a chemical reaction of the *steel* itself, *not* the coating. I have non-stainless knives that have no coating what-so-ever that create a sort of blackish slurry if I use them to cut a tomato followed by an avocado. That's just the nature of non-stainless steel.

You're a bit off on the blade thickness mate, I think that should be mm not cm. Thanks for the vid anyhoe. I like the looks of this thing but the price kinda ruins it for me. I kinda want a mini version though, something like Böker Gnome-size :)
