Florida's schedule is rough, but the flipside of having a difficult schedule is that if you can luck up and win a couple of games you aren't supposed to win, which they probably will (see TN last year), you can come out of it looking pretty good. If I'm Billy, I'm spinning this to recruits as "we play the best, and that will get you noticed".
