Try dosing a true Italian 7g single into the basket, it will cover only bottom part of the basket. Then with the help of a 41mm funnel use the top of the LM tamper (again 41mm sized) to tamp and compress the grind below the main ridge. You should have a little tighter shot with less blonding compared to your one above. Cheers!

The way you used the single basket is not wrong but you could also fill thin part of the basket with grounds and use the small end of the la marzocco tamper (the small end is a tamper for the single basket) to tamp it. Thanks for the video!

coarse, also the output should be measured in grams not ml, as volumetric measurements can be misleading due to the less dense crema

It is not an espresso single shot The result should be 14 grams of coffee not 27

No. Italian single is 7 grams in 25 grams out of. Doppio is double both, 14 in 50 out.

Most videos on the internet uses 18 gram coffee for 36 gram extraction for double shots aka 1:2. However when you look it up the traditional espresso is shown as 7 grams coffee and 30 grams of extraction. I’m quite new to all this and want to figure out which one is better.

Correct. They say this 18-36 is the American espresso. It's now the standard. But in Italy is how I stated. It's literally a small sip of coffee. So 7-25 or you can go as you said 7-30. And double(doppio in Italian) 14-50. So more water less coffee. In theory more extraction, you extract every single molecule. Need to grind properly to get this perfect shot.

@@marcelo1810 well, technically, it's 25 milliliters including crema. So, the weight is a bit lower than 25 grams. But it's probably a bit more than 14.
