The easiest way to remove is use big tools. I have struggled for over 30min before until I did this: Get a sledge hammer and a wedge used for splitting wood and some WD40. Spray with WD40, wait 5 min, simply balance the wedge pointed end on cap nut and striking end on roller, ONE WACK and it fly's off. I was amazed after all the headache I've had before.

Thanks for sharing. My bow roller is attached this way from the factory and I was looking for some tips on how to remove the stubborn end caps. I will get the same pliers. My keel roller shaft has drilled holes on the ends with cross pins making things much easier (but more expensive for the factory).
