German Hasenpfeffer: brine in water, vinegar, onions and pickling spices with some potassium nitrate for one week. The traditional was then boiled in water and we added the “aspic” from marinated, then cooked off, pots of pig knuckles that had gelled under refrigeration. Fall off the bone! And those pig knuckles!!! Made the absolute BEST ham sandwiches! Marketed them as “East Nashville Knuckle Sandwich”😊 The vinegar and spices reminiscent of 1950’s delicatessens’ product. The rabbits we bought looked like a dachshund: 8 lb average as I recall
All you need to do is add a step to this cook.....and that is to make some good onion gravy and smother!!!! Make some jasmine rice and serve it over rice. Thank me later!!!!
We would BBQ/Oven our rabbit in a rub then add a thinned out BBQ sauce and wrap them in foil until tender and fall off the bones. Northern Oklahoman in the mid to late 80's
