【Basic Fried Chicken】
Ingredients
2 chicken thighs (cut into bite-sized pieces)
1 tbsp soy sauce
1 tbsp white dashi
1 tbsp sake
1 knob of grated ginger
3 times as much black pepper as you think you need
Batter (1 heaping tbsp of cake flour, 1 heaping tbsp of potato starch)
Oil for deep frying (as much as you need)
How to make
Cut the chicken into pieces and put them in a bowl. Add the seasonings marked with a star and mix well.
Put the chicken in the refrigerator for 15 minutes. Mix the flour and potato starch in a separate bowl and coat the chicken with the mixture.
Heat the frying oil to 170℃ and deep-fry the chicken for 4-5 minutes.
During the last minute of frying, lift the fried chicken out of the oil from time to time to let it come into contact with the air.
Remove it from the oil and leave it for about 10 minutes to allow the residual heat to cook it through.
When you drain the oil, it's done!
Point
If you let the fried chicken come into contact with the air for the last minute of the frying time, the moisture on the surface will evaporate, making it easier to achieve a crispy fried finish.
Please adjust the frying time according to the size of the chicken.
For extra-large fried chicken, please check that it is thoroughly cooked through.
To prevent food poisoning, please be sure to thoroughly manage the heating time.
