Yes, more oil = more crispy. That's with all things like french fries, eggrolls, fried chicken etc. Only difference with banh xeo is I brush the oil on; I don't dip it in a pot of oil. (That's too excessive). and thank you! I bought my non-stick pan at Atlanta City Market.
