This was a time without proper digital receipts for everything, i doubt they'd be able to prove they had a reservation in the first place so it would be hard to dispute the hotel saying that they didn't

With that said, she took advantage of the moment telling Chandler the deluxe suite is the only available room that so happens to cost $600 a night. This incident reminds me of a similar situation from Gilmore Girls in S1E1 where Michel is lying to someone on the phone about the inn being "completely booked" while lazily going through the ledger.
From what I understood of that, it's possible that Chandler messed up. When he tried to cancel, they said that the room was non-refundable. This doesn't mean that the reservation can't be cancelled. What it means is that you don't get your deposit back for the room, if you do cancel the reservation. The room becomes available for another person and you lose your deposit. That's why they make you pay a deposit in the first place. It would really depend on what exactly was said during the phonecall where Chandler tried to cancel the reservation.
Amenities maybe. According to hotel surveys the tourists who steal for the highest values are Americans. A good Norwegian or Danish duck down duvet cost several hundred dollars and is the item most often stolen by American hotel guest. Understandable in a way, the quality and comfort is above and beyond but a duvet used by hundreds of hotel guests, why oh why would anyone want a used duvet.
