I have always loved this hymn. Good job. I noticed that at times the congregation tries to slow you down on Sunday morning worship. Tell the elders I do enjoy the live stream.. Bless you.
Because song leaders have not been taught how to lead. They start the song and then allow the congregation to lead - therefore, the songs slow down. Great job in your work to preserve the old school hymns.

Well, the time (as in - 4/4) does not dictate the tempo a song will be in. And the majority of hymns never had notes on how fast or slow their song was supposed to be. Thankfully there's no wrong answer really, just preference. I have never heard it much faster but I'm sure it would be interesting to hear some time! Edit: I just checked a few recordings on RU-vid and find that others are similarly slow to mine. What part of the world are you in? Maybe it's a regional thing?

A combination of hardware and software. You can probably do it with an iPhone app or something too. But basically, I record a part and then while listening to it I'll record the second part and so on.
Try hymnary.org. You may have to look around a little, but most have guitar chords on one version or another. I am not a guitar player, but find the chords helpful if I need to transpose.
