FAJITA STEAK TACO SALADS
Serves 4
for the marinade
⅓ cup fresh lime juice
½ cup vegetable oil
¼ cup soy sauce
¼ cup worcestershire
¼ cup brown sugar
2 teaspoons ground cumin
1 ½ teaspoons black pepper
1 tablespoon chili powder
½ teaspoon red pepper flakes
3 cloves garlic, grated
2 pounds skirt steak
In a bowl, mix together the lime juice oil, soy sauce, worcestershire, brown sugar, cumin, black pepper, chili powder, red pepper flakes, and grated garlic. Using the tip of a sharp knife, cut small slits in the steak to allow the marinade to get into the inside of the meat. Place steak and marinade in a gallon bag, seal, and work the marinade into the meat with your hands. Allow to marinate for at least 4 hours or as long as 8 hours. Grill on high for 2 minutes per side or until internal temperature reaches desired doneness. Cover and allow to rest for a few minutes before slicing.
for the avocado lime dressing
1 (8-ounce) container sour cream
3 tablespoons mayonnaise
Zest and juice of 2 limes
1 ripe avocado, mashed
1-2 tablespoons milk
2 tablespoons finely chopped cilantro
1 teaspoon cumin
½ teaspoon salt
Dashes of tabasco sauce
In a bowl, mix together the avocado lime dressing, mashing the avocado into the dressing until it’s as smooth as possible. Thin with additional splashes of milk if needed. Taste for seasoning and adjust. It should be the consistency of thick, creamy salad dressing.
1-2 large yellow onions, sliced and sauteed until tender
1 head romaine lettuce, chopped
2 cups halved cherry tomatoes
2 ripe avocado, sliced
2 cans seasoned chili beans, rinsed and drained
1 (12-ounce) bag frozen corn, thawed
Shredded monterey jack cheese and cilantro, for garnish
Toss the romaine in the avocado lime dressing. Fill bowls or plates with dressed lettuce, tomatoes, sauteed onions, sliced steak, avocado slices, chili beans, corn, cheese, sour cream and more!
