BBQ is a controversial topic here in the US. For example, I would never squeeze the life(juice) out of a burger. But back to French Culinary, it would be nice to see a few rotisseur or grillardin recipes in the upcoming episodes. BTW I have been recommending your videos to everyone in my culinary class.
Yes I agree. In the US outdoor cooking is just as popular if not more so in many ways than indoor cooking. Some French grilling or BBQ style cooking would be nice.
Lovely vlog - only realised now that you've based in Australia too (I'm in Sydney). Curious how you got hold of some of the more obscure ingredients like rabbit for your recipes.
It depends on how fatty the meat is - too much fat ooze is not good either. Also, those weren't technically 'burgers', they had egg and breadcrumbs in them, so more like grilled flat meatloafs/meatballs, lol. The bread in them will hold a lot of moisture/juices. I'm sure they tasted wonderful with those juicy pickles and fresh garden tomatoes on them.
for the perfect burger patty add: half minced beef half minced lamb dijon mustard grated onion minced garlic salt oregano marjoram fresh mint (optional) worcestershire sauce or bbq sauce Lemon juice I don't add bread crumbs or egg but my mother uses those in her recipe
