Patra is a stuffed rolled colocasia leaves snack that is popular in Gujarati cuisine. It is made using colocasia leaves that have a sweet and tangy gram flour mixture spread on them and rolled to form a pinwheel. They are steamed or deep-fried to make a delicious snack. Maharana Foods is a popular food brand in the town of Bardoli near Surat. Their crispy fried cup-shaped patras are the best in quality and taste. #streetfood #indianstreetfood

I am from Bihar and this dish made of "Patras" is very famous in our Bihar. These leaves are known as "Arikauch" Or "Kanchu". We apply thick gram flour paste on these leaves, roll it, then cut it and fry it, then a gravy is made of dry spices with onion, garlic, tomato then fried ones are added to the gravy. Many people also eat it like pakoras.

I am from kerala and i am a gsb. Actually this is one of my fav dishes. The only difference is that we dont fry it we steam it and cut it after cooked. In this video it is shown like a snack but we eat it as a meal with it we use some oil because the leaf is hot for our body and oil makes our body cool(i know my english sucks but i think u got it what i am trying to say)for the first day we eat it after steaming it second day we fry it using some oil(just like we toast bread in a pan) and the third day if there are some balance then we add these fried ones in a curry. (Actually there are no order like i said you can make it however you want.. But the only thing you have to take care of is that cook it really well )

Gujarati always follows Maharashtrian. Whatever product or food originated from Maharashtra, they give their name on that product. And about Aluchi Vadi it's the same procedure whatever gujrati doing. In Maharashtra, it's too common in home because Maharashtrian's are original 😀.. Gujarati's are duplicate.. they always copy Maharashtra recipes and give their name 😅... I suggest Gujarati's keep your originality in Khakra,Dhokla,Faphra,....

I am from Trinidad, West Indies and we make something like this too. We call it saheena. There are two versions of saheena in Trinidad and this one is called the rolled saheena. It tastes really good.

I am from Uttarakhand and we call it "Patyud" and it's quite popular here especially in hilly areas but they are steamed and shallow fried and taste so damn good ... ❤️

What's the main ingredient of that batter? We at Mangalore, make it with Rice and coconut with some fried spices such as coriander seeds, cumin seeds, urad dal, methi, red chillies all fried in coconut oil, grind with coconut and soaked rice, make the paste and after that spread it on the leaves just like in this video, we steam cook it and eat with dollops of butter and after steam cook it, we slice and shallow fry it too sometimes, which is also heavenly 💕💕 We call it Pathrode at Mangalore . They fry , for commercial value, in Gujarat where Bardoli is situated, authentically it's not fried it steamed, but due to more commercialization it's Fried in palm oil so it get more life, and nutrition value goes down

It's also made in Bihar, my mom has been cooking it since I was a kid. It's nostalgic for me to watch video of this dish. Glad to know it is also popular in other parts of India. This is real Street food, no cheese no amul butter fiasco.

Hi.....I m from the lovely island of Trinidad & Tobago where we call this street food 'saheena'. It s prepared both ways either rolled like this one or the spinach/bhajee leaves used are finely chopped and mixed with the paste/basan then flattened to small round cakes by hand and then fried. A chutney is made to be served with it😋 Interesting how our foods are similar but yet we re all so far apart🙂

Hello. Yes we also call spinach 'bhaji' and Our forefathers were from Uttar Pradesh, so that s where we got 'saheena' from......those of us of east indian descent that is🙂

Yes I kept standing in queue on this Bardoli Patra shop for purchasing one kg of tasty Patra while in service during 2003 in Surat.Realy it was crispy and testy. .

In Suriname, UP and Bihar people, we call this yummy and healthy snack *Sehna.* It's made with almost similar leaf called tayerblad with a paste of urdi/mung daal, flour and mix of spices. Steam the roles before cutting. Fry in low oil. Delicious with some nice chatney❤️😘

This is patrade in Karnataka, available in couple of restaurants in Mangalore Taj Mahal & Ayodhya. Its not fried here its steamed. We do cook at home, on large kesu leaves, tasty & healthy food

In English this botanical name colocasia, kannada kesuvu, Tulu Thevu, preparing this dish pluck the leaf before 2 days, otherwise irritating sensation for toung for.some people.

In Himachal too we eat these, it's called Patrora in dogri language. Method and batter varies as per region and taste . We boil these then fry in oil.

I am from UP near Varanasi....And These leaves are called Girwachh leaves.....My Nani used to make these fritters and the recipee is not that simple as shown here.....The pre processing of Girwachh leaves to make it soft enough is a tough task employing the use of Lime water as master ingredient ...And I am sure that was important to define the unique taste of fritters my Nani used to make....Didnt get to eat those again after she left the world....

In sikkim we first steam it, cut it and then fry it.. It can be eaten as a fried snack also and also a gravy is made to have it with rice.. Here we call it Macha for veg🤣🤣 means Veg Fish

I am from bardoli and we eat these patras on regualr basis they are very delicious. The orignal patra are of jalaram patra but maharana patra maintains good hygiene.

No this is Karnataka coastal Mlore side very tradeetional oledst dish , but wont deepfry ,only with oil shallow fry. Some time sweet and sour or sometimes spicy. Only in the rainy season we prepare. Now a days this colocasia leaf get all seasons. We called pathrode.

We call this saheena in Trinidad. We eat it as a snack or curry it and sometimes we stew it and eat it as a meal with rice etc. We spread the grind channa paste, roll and them steam before cutting and frying..yummzz

In Karnataka Mangalore, we made paste like these ingradiants, one cup white rice, green gram 3 spoon soak 3 hours , add coconut grated small quantity ,3 spoon jaggory , lemon size tamarind, salt , thick paste to apply, and packs are boiled in idly pot 20 minutes or direct deepfry in oil we called tradeetional pathrode, this leaf called colocasia in English.
