Fresh ice cream made with good local milk and cream is like nothing else. There's a dairy farm near my dad's house in CT that has their own ice cream stand and it's so rich and creamy. You can really taste the quality of the dairy in it. The mouth feel is everything!

The problem with "organic" is all the loopholes industries can still go through to get around regulations. There is no way to know who is actually organic and who is organic via legal loopholes in the system. Organic farming also requires much more land which is already a huge problem.
Ehh that CA law about having to be certified in pasteurization to sell scratch made ice cream is complete BS. Nothing like making it harder for small artisan businesses and easier for big corporate one's.
Requiring pasteurized ingredients (including pasteurized shell eggs) would seem to be plenty, and give small producers creative control while minimizing costs.
@Robert Cuthbert Even if ice-cream makers could get away without pasteurising their goods, they'd get buried under a pile of food-poisoning lawsuits anyway. Unpasteurised milk spoils FAST, even with refrigeration, and is statistically one of the riskiest things you can ingest if you don't get it on the very day it's made. My point is, why would you want to take risks with unprocessed milk just for slightly better flavour, because it's nutritionally very similar to 'ordinary' pasteurised milk?
All the ice cream looked great. It’s nice to think that the farm could be eco friendly, I think if the farm wasn’t certified organic it would be a lot harder to claim the ways it may produce in a more earth friendly way. I wonder if the farm keeps or sells the calf’s?
They usually keep the heifer (female) calves and sell the bull (male) calves. The heifer calves are the future of their business so if they can be used on the dairy then they are kept so they can keep the herd going further.

Straus is THE best! There are also claravale and organic pastures. brands in CA that produce raw milk. Its a whole other experience. I wont ever go back to regular milk....EVER!
