It's just me and my husband now. 5 times a week, I throw 1 chicken breast in the crockpot and add a simple ingredient or 2 to make our dinner for the night. I rotate between serving it over rice, potatoes, or noodles. Tonight is chicken parm. I'm going to try your chicken salad recipe next weekend. 🎉
I love crockpot recipes especially when the weather is hot. Cooking a meal in the crockpot avoids heating up the house instead of using the oven. My go to crockpot meal is chicken and gravy. It can be served on rice, mashed potatoes, o egg egg noodles.

I cook just for myself . I purchase small packages of meat when they are on markdown. I cook a1-2 proteins @ a time, a starch, and one or two vegetables sometimes have a can of fruit such as Applesauce to add to the prep lineup. There are times I will do a one pan dinner and then leftovers are all together in a container. If ingredients are cooked separately then I store them in individual containers. This allows me to mix and match. Again, adding a fruit, quick rice or another can of veg, I have a healthy and varied meal. For example cooking two slices of Ham, and 1 Chicken Drumstick so I have different proteins with the same carb and vegetables .
