Returning a child's toy became the basis for a relationship
The spinach is symbolic for his late wife. The plate falling because of the unstable surface it was placed on represents how unstable she was, and fell into her own demise. The green-ness of the spinach symbolizes how she was green with envy for whoever it was Neil was really in love with, and the way the spinach falls off the place and spreads onto the desk represents how she was losing her mind. Neil's childhood sweetheart found joy in the falling of the plate because it was essentially her being happy that Neil's late wife was no longer in the picture. Like the spinach, the late wife had been emotionally devoured and unable to support herself. But also like the plate, she may not have gotten that way had it not been for Neil Breen.
I'm not sure, if you have closely studied the works of the breenius Neil Breen, as I have the past thousand years or so, you will find that the spinach is actually a metaphor for the duality between man and god, and the plate signifies mans struggle to find god amidst life. You can clearly see how he struggles when he chews the spinach, would he do that if the spinach were his wife? I don't think so. Neil Breen reaches down to deeper and more profound levels than ever before with this scene, truly magnificent and Breenius!
You both have compelling theories. I however had a different perspective. Throughout the movie you can see that Neil is struggling with his decision to hack and expose government secrets. His friends are having troubles and his ex wife had just died of an overdose. It’s hard for him to not feel responsible. The time to expose to government secrets to the world is fast approaching so naturally Neil is terrified about the chaos that could ensue from his actions. The falling of the plate symbolizes the inevitable chaos to come. The concerned look on Neil’s face as he stares at her is him trying to figure out how she will take it. Her laughing signifies that she is willing to accept whatever transpired and will stand by his side. Thus explaining the relieved expression on Neil’s face right before letting her in on his secrets. He’s happy he has a partner again after what had happened to his ex after she found out what he is actually up to.
It's a metaphor. He has a whole lady in front of him and chooses to put his "plate" on top of the unstable files which represents the grief of his lost wife

Neil loves his metaphors: he said earlier in the movie that he felt less stable. Now he's just as unstable as the plate on that shelf. That's plot progression for you!!

Why is nobody talking about the fact there is only spinach on the plate?! There’s no dressing, no other veggies, nuts, croutons...it’s just spinach leaves. Ya know this guy is the caterer in all his movies, right? What does he feed them?!
This scene is a metaphor. The spinach represents nature. It's balanced precariously onto of a pile of papers in a file representing the unstable corporate system of lies. It's only going to topple over a be ruined. Breen is a genius.
We can't possibly understand Neil Breens genius. Maybe in a couple hundred years time, Scholars will finally unravel the deep meanings of Breens symbolism, but for now all we can do is bask in his glory and hope that someday somehow, Neil Breen will forgive all our sins and elevate us to his kingdom of heaven where we will live out all eternity knowing all the happiness and spiritual fulfillment only Neil Breen can give us!

Cosmic Horror may be hard to achieve, but surpassing this masterpiece is impossible. The falling spinach clearly forms an eldritch symbol of unknown origin, revealing the woman as another form of the crawling chaos, Nyarlathotep. This explains the continuous torment and headaches of our protagonist, as the Outer God is trying to deter him from uncovering the truth.
I honestly believe that Neil is a fully competent and self aware human being and he’s just wealthy enough to make really odd and poorly made movies to troll people 😂
