My husband of 38 years watches you with me. So today he went out and got me 2 deep freezer’s. He said that come spring time we are gonna plant a garden and make some freezer meals with our fresh vegetables. I am gonna go back just to watch when you do them.

RU-vid does not pay a ton, people need sponsorships and ads to make end meet. I do not mind if people pitch things and would not mind if Becky diod if it was a producty she believed in. I would be happy for her and her family.

We add chopped green mangos, onions, and slice carrot along with peppercorns and whole or chopped chilis. Limes can also be pickled but on their own.

How funny that you just ferment chillies in this video. Even though I don't have a garden myself, I got some of my mother's home-grown surplus chilies, and they are just now in the process of being turned into sriracha. I want to say thank you so much for your videos and your recipes, they gave me both the idea and the courage to start fermenting my own sriracha. Hygge from Denmark

What I do to keep the vegetables submerged when fermenting is to use really small (short) condiment jars. I put them inside the wide mouth (bottom side down) and then push them down far enough so that I can screw on the canning lid, which holds them down onto the veggies below keeping them submerged, but keeps the liquid out so they remain buoyant and up against the lid. It works a charm!

Hey Becky - you can put one of the tiny jelly jars in the top of your half gallon and it will hold down the food under the water the same as a fermenting weight would. I also like to use the grey plastic screw top lids from Ball instead of the flat and ring - it breathes a bit better that way.

Hi Becky if you cut the tomato paste can on both ends then push the paste through from one end the paste will come out a lot cleaner and faster.

Hi there. Silly question.. How do you store your potatoes and onions in the basement over the winter without them sprouting or going rotten. I know you mentioned wooden boxes...does that help with the potatoes or onions?

Tip for you about your ferments... If you don't have weights to push down the floating food, make your own using plastic freezer bags! Just place the (empty) bag in the top of your jar and fill it with additional brine. It will spread the bag out and its weight will hold the floating food down! Seal the bag and continue your fermentation. Note: Always use BRINE (not water) in the bag, just in case you get a leak in your bag!

My husband made chili today without opening a single can from the store. Everything besides the beef was grown in his garden, even the beans! It was by far the best chili we have ever eaten and was totally something I could see you doing. 😊

Hi Becky! I want to share a tip I got from my grandmother for the tomato paste cans. Open both ends, remove the round from one end and then push the paste out from the side with the round still on. You will push out all the paste in the can real quick. Just make sure to grab the second round after it comes out the can.

Becky, here's a tip for getting every single bit of tomato paste from the can without having to scrape the can. Open both ends of the can, remove the lid from one end then push it through using the opposite end of the can. My mom always did that with hers.

OMG, There's our girl, she brightens up my day! I've been so depressed wondering why I'm still alive as I'm a cancer survivor but lost three siblings to cancer. Once upon a time I was a "Becky" lived on 30 acres and had animals, horses, chickens, goats, etc and a garden. I made quilts mayo, cheese but I have since then retired from all that. I love Becky, she's charasmitic, I'm not. She is an inspiration and a wonderful person, luv her and Josh. Her parents are great, I get dpressed so I visit her dad's channel, refreshes my soul and has me thanking God for all my blessings. I'm a retired disabled veteran and appreciate that my bro calls me daily, wish I could move back home. So happy for Becky expecting a bundle of joy, she better take time for herself.

Hi! I learned from my mom that if you open both sides of the Tomato paste can, you can use the bottom to push all of the contents right out of the can! Like everyone else, Love it when I see your uploads! I tend to stop 🛑 whatever I’m doing whenever possible! 🤣

Have you ever noticed that in most recipes you only need two tablespoons of tomato paste? What I do is scoop two tablespoons in those snack sized zip lock bags and I put them in the freezer ready to put in stews or pasta sauce and such. Works a treat!

Becky! I recommend removing the bark on the fig cuttings at least around the lowest node - the one covered by water - it makes it MUCH easier for the roots to actually grow without having to break through the bark. I did this on my fig cutting, which I cut two years ago, and it just gave me the first fig and has 7 more on the plant :D :D

Becky, I made ketchup for the first time this year and used my Nesco 18 quart roaster to cook down my tomatoes after running them through the blender. It's so much easier to let them cook down for 24+ hours in the roaster rather than babysit the stove. 🙂

Same! I let mine go 36 hours I think it was on my roaster. This summer was the year of the roasting pan for canning for me. Best thing ever!

You can put the catsup in one of y older big roaster pans and put it in the oven at 300 degrees and stir every once in a while until it gets slightly thinner than you want, because it thickens as it cools.

Regarding fermentation weights, I’ve had good luck using a large cabbage (or 2 or 3)leaf folded to fit on top of the canning jars to keep the product under the brine. 😍

Sometimes another jar will set down in the larger one and hold the produce down. You can find a jar to slip down into the mouth of the larger one and then pull it out, fill with water and screw a lid and ring on. It's worked for me every time. And maybe a bread and butter plate inverted would work for the crock type container. Sure would save a lot of stirring and knowing me, I would forget a day or two.

You could also use rocks from outside! If you give them a clean and put them in sandwich bags or freezer bags they will make great makeshift weights. Just make sure the rocks are large/small enough to fit in the jars 😊

My grandmother's recipe used pureed carrots in her ketchup. It was good. The carrots helped with sweetness without adding a large amount of sugar.

I absolutely love chopping my peppers and onions for the freezer! This year was my first for making ketchup and it is delicious. My husband was listening while you were taste testing the ketchup and he looked up and asked, “Did she make that expressive face when she tested it?” 😂

I didn’t learn how to grow and/or can until my later years (52 yo). I remember my grandma doing this, but not my mom. I’ve been growing vegetables for the last four years and preserving what I grew! I wish my girls had gotten this skill before they moved out on their own! Well done you for all you’ve accomplished! ❤

I don't have fermentation weights, but I used a zip-top bag filled with water to hold everything under the vinegar line in my fire cider this year. Works really well!

@@christicepeda1264 It's an herbal style medicine made with citrus, garlic, hot peppers, and herbs. It's used in the wintertime as an herbalistic preventative. Any time we get stuffy or achey, I add a shot to warm water and drink it like tea. Becky has a video on it! I can't remember if she calls it fire cider or master tonic. It's the same thing 😀

Hi Becky, I have the same food saver, mine stopped working also. I cleaned it completely, it didn't look bad but it did have a slim amount of dried liquid on the lid and a tiny bit in the channel. After I cleaned it, it started working perfectly. Worth a try.

You can get 12/14 oz bottles of the same ketchup you're trying to replicate for $3.76 a bottle on azure... I'd rather do that than risk botulism with an unsafe recipe.

Considering the amount of vinegar in it you don't know what you're doing if you think it's unsafe. They make ph strips learn to use them.

Becky, you can put small jars filled with water, or small saucers on top of the fermenting produce. This is the old traditional way to do it in Eastern Europe, easy and practical. And, on the side note, the minimum suggested salt proportion is 1.5 % of the produce weight. This way you can drink the brine afterword (many Slavic cultures use the brine to make delicious soups and cure hangover 😋). You can add slices of horseradish root and leaves, some mustard seeds, leaves from some fruit trees (e.g. cherries), and shrubs (berries, grapes, etc.), oak leaves, or even some green tea because of the tannins that help to prevent mold...

Those tips sound veey interesting. I should look around for more Slavic fermenting knowledge. We in Finland are sort of not very versatile with our fermenting. All we do is pickles, at least in my family. It's really hard to even find affordable jars here.

@@leena2522 This is so interesting... I always thought that majority of Europeans do the fermenting... You are so close to Russia, and they do lots of lactofermentation. Perhaps you can find the jars and other stuff there... Or, the old tried Amazon could help? Hre in the US we have some reliable jar types, but I buy some things on Amazon, like the special fermentation tops, glass weights, etc.

@@mswsamrazik Had I lived this close to the border a couple of years ago, I could have propably purchased good and affordable jars from Russia, but now the border is practically closed for who knows how many years, so that's out the window. I find it interesting too that we have so little fermenting culture, even though we enjoy fermented and sour foods. Maybe the preserving culture just didn't survive the fast industrialisation and urbanization.

pick yourself up some citric acid from the canning section of your store. Next time you need to give something a tang WITHOUT adding more liquid, use the citric acid instead. Its also great when you want to add tang WITHOUT adding a vinegar or lemon flavor.

Hi Becky, A couple things I wanted to share. 1. all those beautiful peppers you had, if you save the piece with all the seeds and just dry them on that inner piece, you have your bell pepper seeds for next year. and 2. when you want to reduce your tomatoes down the best way I have found is not to use a tall pot. the more open the pot (think your roaster) the faster the evaporation can happen as you have way more surface that can release all that moisture. I have only been watching you for a few months but I wanted to say thank you for all you share. I have had my garden for a very long time. I garden on about 3/4's of an acre lol. I am about 3.5 hours from you which I didn't know until I watched an older video. Keep doing you. Much love to you and your family.

Opening a ferment and stirring introduces oxygen which is considered unsafe, use a clean leaf from one of your cabbages to weigh it down and then just burp it daily, this is equivalent to using a weight as long as it is packed tightly.

it's so amazing for me to hear that your seconds were $1/lb when in my local area the price of peppers is $1.50 per ITEM. The price difference is mind-blowing. How does the cost of these home-preserved foods compare to the costs of just buying it? Even if I costed my time as ZERO, the money costs of planting, caring for, harvesting, and processing some of these things must be higher than the purchase price at a supermarket. Then considering the very large amount of time and labor to grow the products, harvest them, process them, and preserve them, it seems like it would be a more economical use of my time to buy a jar of garlic powder (for example), than to grow, harvest, process, machine-dry and home-powder a huge harvest of garlic until it is reduced to the same few ounces as in the supermarket's jar. Would she be better off just buying most of the food she processes, and using the time she saves to make her own clothes, for example, or to volunteer for a charity?

Random question- with all the fresh produce you store in basement and garage, how do you avoid being infested with ants, cockroaches, mice, rats etc or even mold/fungus?? I love your videos, keep up the great work. I love how you are so natural in camera and show the real experience with some failures rather than the fake ‘everything is always perfect’ approach. 😀💕

Hi I have a freeze dryer too, I freeze dry my tomatoes for tomato powder, it also thickens my sauces. And also you can freeze dry vinegar so you’re not adding liquid to your sauce. I hope this helps

Hi Becky! I’m not sure what the problem is with your food saver, but I discovered a quick fix: if there is no suction, just wet the gaskets top and bottom and it will work until you can get replacement gaskets from Amazon. Worked like a charm for me! Love your channel as always take care ❤

I can still remember one day taking some of my homemade jams, sauces and vegetables to my dad complaining they didn't taste like mom"s. He told me at that time it was a different kind of love that went into the jars. Even after 20 years he has past I still remember this.

Have you thought about getting some lemons and making limoncello? It's very easy and so refreshing. A similar process to what you're doing with the pears and apples. Just lemon rinds in 100 proof vodka or 190 proof Everclear. Let soak for 3 weeks, shaking once a day, and then add a simple syrup at the end. You do have to store it in a cool dark place during those 3 weeks, but after it's all finished you have a delicious fresh liquor that you can put on top of dresserts or drink as it is. It is recommended you use it within 3 months of the date of preparation, though.

I usually add the tomato paste towards the end because it reduces quicker with less chance of scorching vs adding it early and cooking down further. Also peel side down when cutting peppers to slow the dulling of your knife.

I love watching & learning from your videos. Hurricane Ian blew though our town of North Port, FL and we still do not have electric or water. Thankfully some of our family were able to stay with relatives just north of us who have their utilities. Watching your videos is very therapeutic for me especially right now.
