My 4 year old daughter is your biggest fan. And now, in addition to watching your videos, she likes to run around our backyard and “play Becky”. She carries a bucket around and picks random leaves and sticks, calling them her garden crops. Then she pretends to make freezer meals. Just wanted to let you know that you are influencing one little girl in the best way. Don't know if u already do this but, my granny use to pour COOLED bacon drippings into old fashioned ice cubed trays and freeze it. When it was frozen she took the cubes out and stored it in freezer bags in the freezer. One frozen bacon cube was equal to one tablespoon.

I actually do some of these dishes with vegan meat substitutes for my vegetarian daughter and omit cheese for myself. I'll also modify a lot of things to be gluten free for myself too. I get a lot of ideas and just use what she's doing as inspiration for something new.

A Tip: If you end up with left over filling just make stuffed pepper soup, which is everything that goes into stuffed peppers in a tomato broth, it's delish and a great way to enjoy stuffed peppers without all the work. Hope you try it and love it.

And you can add some of the scraps from trimming up the peppers. Also, the filling works well for stuffed tomatoes, stuffed squash, and I suppose you could use it as topping for baked potatoes... but you might want to add a little extra cheese if you do that.

I’ve always considered myself a good cook but I always just used to brown my meat just so the meat changed from pink to brown, I now follow your method Becky and the added flavour is so noticeable, so thanks Becky at 64 you can teach an old dog new tricks ❤

You inspired me to start shopping at a local farmer’s big farm stand. I’m surrounded by Amish farmers in the Adirondacks. I’ve only been up here a year. But, recently processed 25 lbs of tomatoes into sauce, salsa, soup for the freezer and also got 25 lbs of enormous candy onions. Picked up apples, carrots and beautiful bell peppers today.

I love watching your energy turn into motivation at my house 😊!!! I had a thought about post partum meals you may want to consider when putting food up. If you are planning to breastfeed, you never know if the baby may have a tummy sensitivity to tomato or greasy foods, or even dairy. You may make a few recipes that are dairy free, or less acid so you have options if you need to troubleshoot tears in the first few weeks. Just a thought??? Keep on motivating the rest of us sweet girl! Maybe we can return the favor when the new baby arrives.🎉

My Grandma used to save her bacon grease too. It was her secret ingredient in her famous Molasses cookies. We all had the recipe, but hers always tasted better. My sister (who now lives in her house) got her recipe box, and discovered the "secret".

You should do a jar of freeze dried aromatics like onion, peppers, celery, carrots. Either grind or reconstitute with broth

I have freeze dried Maripuax. Diced Carrots, onions, celery. I can just scoop and add to my broths! I haven’t used it yet, but soup weather is coming!!

I make "Stuffed Pepper Casserole" - never take the time to stuff peppers. Just take all the ingredients for the stuffing mixture and add chopped peppers. My family loves it.

Caregiver for my father he loves stuffed peppers. Once had one leftover stuffed pepper mixed it with the leftover sauce poured sauce and crumbled the mixture over ravioli with some cheese and baked it. Fantastic and no waste. I really enjoy all these creative dishes and money saving ideas.

Homemade freezer meals (whether from friends or made by me) were a literal godsend those first 3 months after both my kids. I also made some frozen breakfast burritos and other quick food I could eat with one hand, because the other hand will be holding a baby!

I just bought a bag of onions and in the past I've always ended up with a few rotting before I can use them. Now I'm planning to chop up most of them to elimate the waste!

I vacuum pack my chopped onions and tomatoes in premeasured sizes, 1 cup, 2 cups ... I know what most my recopies call for. I use masking tape to label the size and store them in clear shoe boxes. they stack wonderfully in my upright freezer.

I have chronic pain and was always afraid of start cooking something and not being able to finish. But after watching Becky’s meal prep, I realized it’s ok to finish it later. I made tortillas (they turned into crackers, still delicious) and the pie crust. It took me 3 days to make a chicken pie, but it’s finally in the oven and I’m so happy!

I bulk prepped freezer meals for postpartum, too! I did breakfast and dinner, and it was a game changer the first few weeks--especially when trying to establish a good latch during breastfeeding. Congratulations to you and Josh, Becky! So happy for you both!

@@stephanien2286 I made oatmeal bakes with fruit, batches of pasta with lots of veggies and proteins of choice, stuffed peppers (like Becky did), pre-marinated salmon/chicken/beef to take out and defrost or throw in the slow-cooker, sheet pan protein pancakes with wild blueberries, raspberries, chocolatechips--whatever sounded good (cut into square servings -- I used Kodiak Pancake mix because almond flour pancake recipes didn't go very far) and when reheated in the microwave I used a damp paper towel for 1 minute and when warm in the middle I topped with nuts and pumpkin seeds and maple syrup or honey. I also had homemade trailmix on hand (you can buy them but they often have too much sugar), cheese sticks, and as weird as it sounds I had Once Upon A Farm baby food pouches and yogurt pouches because they were healthy ways to get quick nourishment. Have some frozen veggies on hand. I also prepped You're going to be STARVING if you're breastfeeding, so keep lots of healthy snacks on hand. Buy Nectar oriquid IV(if youre ok with the sugar levels) for electrolyte replenishment. And please make sure you go walk outside as much as you can! Vitamin D is amazing. Good luck!

Hi Becky!! I've been watching your videos for quite some time, but even more so the past few months. In May I had surgery to remove a cancerous tumor along with part of my femur to make sure it was all removed. As a result of the placement of the tumor, I also needed a TKR and ended up with foot drop from some nerve damage that happened during surgery. Since my surgery, it's been difficult to get back into the swing of things with being independent again, and finding the drive to do the things I once loved to do before- like cooking. Watching your videos has helped me immensely in being motivated again and wanting to learn how to be less wasteful and more self sufficient. Especially when you talk about eating out because you want to, not because you have to. That's helped change my outlook to get my butt in the kitchen and prepare freezer foods!! I'm EXCITED to be in the kitchen again and I honestly didn't know if I ever would be. Thank you for posting as frequently as you do. Your positivity and drive that shines through your videos truly makes my day!! 🌻 Keep it up!! ❤️ P.s.-could we maybe get a hair tutorial for how you do your buns? 😆 I can never get mine to stay in place!! I never had a turkey that didn't have stuff in the cavity. I've always thawed by turkey first so that I could pull out the neck and gizzards from the cavity. I usually cook those separately to add to my gravy. You said you got the turkey from Kroger last November (at least that is what I heard). Has anyone else ever gotten a frozen turkey with nothing in the cavity?

won't hurt to cook the turkey with the bag of stuff inside (I've done it accidentally MANY times!) just pull it out when you're done and chop to add to turkey things or feed to the pets or toss

Has Josh ever told you he didn’t care for anything you make? We had been married less then a year and I made salmon patties for supper one night. He pops up and says can we never ever have these again? He’d already eaten them several times, asked why in the world didn’t he tell me? My SIL popped up after years with my daughter making a tomato base Swiss steak and asked her not to make it any more. Guess they were just being sweet

Becky you remind me of my older sister. Growing up I used to watch my sister in the kitchen throw together such random ingredients and make the most flavorful and delicious dinners, I was always amazed at how someone could possibly cook without looking at a recipe. My sister inspired me that way, especially because what she would make tasted so much better than any recipe I’ve ever followed. I took it as a lesson and began to push myself to experiment in my kitchen, it is the only way I cook now, I’ll glance at a recipe here and there if I want to make a specific dish that I’m not familiar with the taste. But I’ve become so good at using my own tastebuds (let’s say it was a dish at a restaurant) I would formulate how they might of accomplished such a flavor, later make it myself randomly, and dishes coming out absolutely incredible. I think food taste better when you aren’t being so knit picky

Becky, I have been enjoying these cooking w/o a specific recipe presentations so much. In the last two days hubby and I have driven well over 1000 miles, and we are TIRED. We unloaded and piled everything in the living room last night. This evening we will have company. No problem. I went to the pantry (all over the mobile home), chose six jars of canned food, and then threw the ingredients for a loaf of bread in the bread-maker. We will have a delicious supper and meanwhile I'm working at putting away all the stuff from the car. THANK you for continuing to inspire me even as I continue to have new canning ventures in my 8th decade of life. One more thing. I was SO SO glad you finally got a Sharpie and labeled all those jars. I love your basement/shelves.

Omg! Pressure canning chicken was a GAME CHANGER for my family. Game changer, like I can’t even tell you. Like you, I make a lot of meals that take a bunch of prep, but comes together usually as a one pot deal….well, canned chicken is really great and casseroles, soups and stews. In fact, my 10 year informed me that our recent chicken noodle soup I slapped together the other day, was the best yet. Canned chicken, and canned broth. Bam. Just wish I had those pre chopped frozen onions! Ps, said kid, and I absolutely love watching your channel.

Try starting by replying 1 ingredient in a recipe to gain confidence. Like turkey instead of chicken or a different vegetable. Maybe add an extra vegetable in a recipe. Or try combining 2 similar recipes. I rarely follow a complete recipe even though I have more then 200 cook books. I love reading them for inspiration for ingredients combinations.

Honestly, same; it looks so fun and easy when others do it, but I always stick to a recipe 😅 I like trying new recipes, and I will adjust spices to taste (e.g. I am not a hot pepper person), but I need a recipe! 🤓

I know when I want to make lemon bars I use the blue taste of home book, when I make Mac n cheese I use the pioneer woman book and if I make Hungarian goulash I have to hunt for the recipe I clipped from the Epoch Times. Always trying new recipes. When we brand calves I cook for 30 to 40 people. Best time to try something new! 😁

I have never thought about making stuffed peppers any other way than the Italian style! I love the idea of the enchilada sauce and Verde ones! After watching this I started coming up with a chicken and Verde recipe option with Mexican rice! So excited!

Becky! The best rice I’ve ever tasted was one my mom makes. Take one can of coconut milk, and pour the milk, and cream in the instant pot. Fill that can up full with water, dump it in, then fill the can up again about a third full of water. Finally, fill the can up once with Jasmine rice. Put it on the rice setting, and boom. Moist flavourful rice, without it necessarily tasting like coconut! It’s so yummy in a stir fry, with meatballs, or chicken, or whatever meat and veggies, and I’m sure it would taste like heaven in this recipe too!

Agreed… I spoke to a local butcher a couple of weeks ago and he said that he put in an order for turkeys but was told there was NO guarantee that there would enough or any turkeys at all this holiday season. With that being said, being military connected the commissary has already begun stocking turkeys. So far the price range has been from $2.69 to $1.89 a pound and the average size being 20 pounds plus. So I’ll be watching for the possibility of a bargain and I’ll stock up…. 3 for canning and 2 for the freezer along with the hams.

@@deemartinez836 - hi from New Zealand - we are already seeing supply shortages across many of our normal supermarket products - and hubby and i had a gut feeling that christmas was going to be very challenging on the grocery front, turkey included so had our butcher sort for us last month and its now safely tucked away in the freezer. we still have hams from our last pig (hog) that he sourced for us and an order in for another one in dec - beef is a crazy price here....usually we can buy a whole cattlebeast from him locally sourced for all up $800 NZ dollars - that includes killing cartage and processing but currently they are double that!! hope that your all able to get your holiday turkeys and take care from us in New Zealand - avis

Some of the best Postpartum things I ever had were what we call Flapjacks in England. I don't know what you guys would call them. They're oaty bars that are so tasty and oats are a great aid in milk production too. Oat and blueberry muffins as well, I made giant batches and just defrosted 6/8 overnight for the next day, snacked on them while feeding little one.

The main thing that makes it a flapjack is that it has golden syrup in it (it's sort of like a light, golden molasses, really caramel tasting when cooked), I don't think you have that in the US and I don't think there's really anything comparable in taste. Granola bars would be a good substitute in this context though!

I am so happy I found your channel. I'm close to 60 and have never canned before. You given me the incentive to learn how. We are moving next month to leave city life onto a 6 acre property with a 100 yr old cottage. The cottage needs some TLC but not changing the charm of the building. It has a pie cooling window and wood stove in the kitchen. We can finally grow a veggie garden which I can't wait to enjoy the harvest and cann up everything. We also will be getting some chickens. My health has been on a steady decline so this is what the doctor ordered lol. Moving away from all the stresses to where we get our water from the creek and not a street light anywhere so we can enjoy the stars and silence of cars, and no neighbors . Also going to try the natural medicinal path to get off as many prescriptions as I can. Thank you again Becky for all the hard work you do for this channel. It's a blessing.

I am glad to see someone else loving their electric pressure canner as much as I do. I've been making small batches of canned green beans or jam or salsa, etc. as I gather the produce from my small garden. I can get the stuff going in the canner, then workout after work. Super easy for me and I don't feel overwhelmed with a bunch of big canning days, just a few.

I started letting my jars sit longer after the 10 beeps and the siphoning has decreased significantly. Roughly 10-15 mins instead of 5. Happy canning

they do have the lock top pyrex at target as well, if anyone is looking. I actually like to get the 8X8s so we only have left overs once from each meal, so we can have more variety in the week. Just our preference. also use that one that is just smaller than that for small meat loafs & shepherds pie and such for two. really love the lock top pyrex

I have some pyrex with cover locks that are 6 inches square and 2 inches deep, they come in a pack of five and really love them, so much so that I bought a second set. trying ot figure out how to do smaller batches of breakfast meals in them as well! next project I guess!

Hey, Becky! Love cooking with you! I listen to you while I cook! 😊 Just a wee hint for you. Sometimes when you’re in a hurry to put dishes away and they are still hot, when they cool they tend to get stuck like those 9x13s did with you. If you submerge them in hot water again they will lift apart like they were never stuck together. I’m not the only one that puts dishes away here so I learned this the hard way. Hope this helps you as well as anyone else that watches you and enjoys the comments. ❤

You could make “unstuffed pepper” casserole with the rest of the filling. Rather than stuffing the pepper, mix in the diced peppers with the filling and fill casserole dish as you normally would.

We often overlook the obvious. I only started freezing stuffed half peppers in ziploc bags about 2 years ago. I just take out what I need, add sauce and cheese in a pan and bake for a quick dinner. Idk why I didn't do this when I had kids at home, but its really convenient for the Mr and me

When you were cutting all the peppers. You reminded me of my practicum in culinary school. I was cutting mushrooms a certain way with one of the chefs. He was showing me a certain way to make them look nice for presentation. I asked how he got good at it. Many people would think he said "practice". While practice is the main thing, he told me that he took boxes of mushrooms and started doing the designs in front of the tv. He said sometimes learning a certain skill can be mundane and you need a secondary distraction to give yourself the desire to just sit and learn something that is seemingly mundane; sometimes practice is merely just part of the process but its not a helpful answer and not always the most helpful thing to give someone the desire to learn. It doesn't give motivation to say "practice" at times.

I had an older Italian lady years ago tell me to add some nutmeg to the ricotta cheese and egg mixture and my family has always loved it. It might be a nice spice to add to the Italian style mixture in your stuffed peppers.

It is so much fun watching someone cook the things I love but can't cook due to family food dislikes or food sensitivities. When my kids were little I used to do once a month cooking and it was such a sanity saver. As empty nesters there isn't much need for meal prepping and I miss it. Thank goodness there is RU-vid. In case baby throws you a curve ball by being sensitive to the foods you love now, also prep ahead some plain dishes with little or no dairy or heavy spices. And if you are blessed to not have that problem (I hope so!!!) all you have to do is jazz them up when you get them out of the freezer.

The little town I grew up in the only cafe was called the Bluebird! 🐦They made the best french fries and an order was an entire platter full! My friends and I could fill up on a platter of fries for lunch! Sorry, saw your name and had a flash memory (a happy memory)! AND...the whole platter was only a buck!!! It really worked for a bunch of teenage kids on limited funds!! 🍟They were a lot better than the ones that come in the box now days. Big, crinkle fries with seasoned salt and lots of ketchup. Yeah, I know not a very nutritious meal but with a chocolate shake it was to die for! It wasn't an every day meal just now and then with great conversation among good friends that I had grown up with. Life couldn't get any better!

A cup of hot peach tea from Stash can pretty much fill me up at the moment! Not that I'm complaining because I've lost weight that I certainly needed to loose! (It wouldn't hurt if I lost a 'bit' more!) Sigh! But anyway, I think when I'm feeling a bit better I might have to visit my old home town to see if the Bluebird is still there! I wonder if the fries are still as crisp? I bet they aren't a buck any longer.....

Hi Ms. Becky. 😊 If you want a quick way to cook a turkey and still have moist turkey, EVERY TIME. Cook it in a turkey sized cooking bag (like Reynolds), a 18 lb turkey cooks in about 3 hours, sometimes less. I kid you not. No basting, just prepping as usual, follow the easy directions on the box for the bag prep, put into bag, into oven and forget it for 2-3 hours, depending on the size of the turkey! 😊 My mom taught me to cook turkeys this way, it has never failed me in 30 years of cooking turkeys. I also cook my roast the same way, (roast and veggies around it) turn out amazing, never dry.

I'm making the Italian stuffed peppers in this video for dinner tonight and we are so very excited! I've been binge watching your videos and absolutely adore you! One year when I had a bumper crop of peppers I cut them into julienne style and froze them that way. It came it very handy in the winter when pepper prices were very high. We put it in our breakfast skillet meals or burritos. I have never froze them in the manner you are doing so I'm excited to see how you do this.

Im a 59 year old Mom of two twenty somethings and I know they are going to love your channel too. I moved to Florida and am finally gardening like I’ve wanted to for so long. A local store had the electric pressure canner on sale for $250.. my husband grabbed as an early Christmas present! I’m very excited to try it!
