The Ficelle Picarde recipe is a simple but delicious savory crepe stuffed and gratinated. A French recipe from the 50s. Filled with a duxelle of mushrooms, shallots and covered with crème fraîche and Emmental cheese. The traditional recipe does not include homemade béchamel sauce. Good tasting !

Ingredients :
Pancake batter
125 grams of flour
2 eggs
Salt
250 ml of milk
25 grams of butter
Trim
30 grams of butter
4 shallots
250 grams of mushrooms
60 ml of white wine
1 tablespoon of crème fraîche + 200 ml of crème fraîche
4 slices of ham or turkey ham
180 or 200 grams of Emmental cheese
Salt and pepper
