The jam guys is now one of my favorite names for those enemies in The Undead Settlement lol. There are also a few things left to discover, so I'd say it's worth a second look. As for your overall gameplay: You're doing really good and adapting quite well. I mean... Is it really a big surprise? Hollowslayer is a great weapon. It's best with doing what is referred to as a "quality" build - if you choose to go with the quality build, I'd also recommend checking out the Lucerne (I can't remember if you grabbed it or not). It has a really sweet weapon art combo that just gets even better later in the game with a certain item you get.

Shields were rebalanced, full stamina bar for 2 blocked hits or 6 rolls, "fair" balance unless it is focused greatshield build) Strong attack can be charged for small damage increase and massive stagger bonus. You can aim with crossbows since ds2, though I've seen some people switching between bow and crossbow just to aim lol You actually did well fighting that outrider knight at the end, I think they are the hardest basic enemies in the game. This first one specificly, because your character is quite weak when facing it. Shame you didn't fight the demon though, make it your priority next time you play, it is worth it. 😊

The guy at 40:10 was the guy that was shooting those giants arrows at you in the last episode. Now that youre friends he wont shoot you anymore. He will protect any white birch tree in the game with his arrows

Pilgrims are indeed undead, this is the reason why Yoel seeks death but cannot find it ( until he fulfills his purpose with Ashne One) . It is theorized they carry large boulder on their back so the Pus of Man (black humanity from abyss) does not break out and consume them. Purpose of Pilgrims is to find ... well, you will find out if you complete rather convoluted Yoel quest 😁 Double lifts are a thing in DS3, basically two platforms that move in parallel, so sometimes it is useful to trigger a lift and immediately step out and wait a bit. And to learn lore of the giants play DS2 😁

You were just like Siegward trying to use the elevator. If you step on it and hop off, you'll see there is another plataform you can get on. That's how you go up or down. I think you should go back to the settlement and explore it a bit more.
