Processing your catch is part of life when you're sailing around the world. And you get a lot better at it the more you catch! In the few past years we have processed almost every tropical fish imaginable. Here are a few tips to get you started.

Here in the philippines we call the fish marinated with lemon or vinegar, black pepper, chilis, its kinilaw.... but when you cook it with coconut cream, chilis etc etc.. we called it bicol express! Its really hot and super delicious!!! Mabuhay sailing nahoa, Ben and Ashley!

Ben...Great explanation on the filet aspect of a sea monster. I used to fish for croppies as a kid but my dad or uncle always fileted everything I caught. This is great advice if I'm going to become a sailor and catching fish! HA! Also, super nice job on the recipe. Made me hungry at 11pm. Glad to see you clipped in being a safe sailor when under sail on the back of the boat. I wish others would follow your example! PEACE OUT! Ü

Concerning the fish... My Filipina wife makes this every once and then... I am starving for it, so much. With raw fish it is called Kinilaw.

Ok, I have watched a LOT of your videos. With a LOT more to go! THANK YOU VERY MUCH for your video series!!!!! However, the fishing videos, what if you wanted something like shrimp? Have you ever tried, more importantly HOW would you do something like that?!?!?!?!

Ohh! wow your dish is like Kinilaw in Philippines :) My dad used to make like that :) But the different is he marinate it first in some vinegar and lemon just few minutes and after that you need squeeze it gently and you can add your ginger,coconut milk,onion, and some lemon juice, red chilies and that's it a very yummyyy hope you can try it :) Sorry if my English not good :)

GUYS, RE : FISHING Me & a pal were once fishing & we had been out all day with no luck. So, we decided to motor back to the marina. Enroute, we saw a spot which looked like it MIGHT hold a fish. So we stopped & threw in our lines. BAM!! Right away I had one on! He was a fighter! He would run & strip almost all the line off my reel. Then I would crank & crank & crank him in & when he got close to the boat, I guess he got his second wind, because he did another run stripping most of my line off again. Well, he did this several times until FINALLY he tired & we were able to bring him up to the boat. MAN! What a monster this guy was! He was sooo big & heavy the both of us could not lift him into the boat !! So, we decided to beach the boat & hopefully we could drag him up onto shore. Well, that did not work. He was too heavy. So, what we did was, we decided that at least we should take a picture of him. You know what ? He was So big, Hell, the picture alone weighed 8 pounds !! !

@ 2:41 the spine is great for consommé as well, we drink it mostly when we fill sick or after a hangover etc.

Walu??Spanish Mackerel or King Mackerel (Narrow Barred Spanish Mackerel to be exact) Sought after fish around the world especially here in Thailand where your boat is at the moment. Hopefully you can get back to it soon.

Try adding a little of the 'sauce' to your ricewater for steaming...adds incredible richness to the rice, and the fat in the sauce means you don't really need to adjust your measurements much! Let me know if you try it!

In the Indian Ocean those are called queen mackerel and are the most common pelagic species we catch. You can get them up to 20 kegs but most are 6-10 kegs. Here in mozambique the locals call them “ Serra”

You should also before cutting the fish up throw in in the cooler with ice an pour a bucket of salt water in cool let it sit for a few hours an its like a pre salt brine you wont regret it awesome vid guys

If you catch another fish that has an oily texture try smoking the fish then make fish dip from the smoked fish!!! I had some done like that and it’s really good. I will not eat oily fish any other way.

The fish looks like a spanish mackerel? I suppose it depends where you come...in the UAE eg its called kingfish...in South Africa a cuda and in West Australia nick name Mackie...(spanish mackerel). Good catch...

So when you serve this dish over rice, do you heat it up? I just made it today. Haven't eaten yet. And it seems strange that it would be cold and the rice hot.

It you have a beautiful fillet and in the past the fish has had more of a fish taste than you care for soak the fillets in MILK for at least 1 hr to over night to remove the fishy taste. It really works. My favorite is fresh trout soaked for 1 hour fried in butter. OMG

Once again, you guys nailed it! Fantastic videos! Saltwater with fish >> Osmosis >> Adds moisture (water content) to the flesh. Ditto with chicken or pork Walu : A word of CAUTION! Walu in Fiji is a "Narrow-Barred Mackerel", Scomberomorus commerson Walu in Hawaii is "Escolar", Lepidocybium flavobrunneum It is *NOT* the same fish. Escolar can be toxic due to wax ester. Narrow-Barred Mackerel = Yes + yummy Escolar = Not recommended. Side effects can be...kinda shitty.... en.wikipedia.org/wiki/Escolar

The name of this specie is Narrow Barred Spanish Mackerel, steamed Hongkong style with Soya and Ginger or steamed with Nyonya sauce (Malay style sauce) is awesome!

Ah, coconut milk, lime lemon, onions fish and I cannot get it anywhere in in the mainland! Same goes for poke. Have to fly to Hawaii to get anything like this. You guys are killing me. I'm going to smoke some pork ribs and pig out - take that.
