Thank you guys so much for this video! I've seen 1 plate filtration video from a small brewery before, they didn't go deep in depth on how these filters work & it looked so crazy and intimidating I had resolved myself to commit to another filtering method when the time comes to scale up my beer brewing - but this video was significantly more straight forward and simple that, while it still looks like a lot of work, it takes most of the intimidation out of using these filters. Great info, probably one of the only licensed mead/wine makers I have seen who still use Star-San. But I love seeing so much familiar stuff on a larger scale.
You can filter it naturally by keeping the mash to rest for a week or so, the residues drop to the bottom and then you pump above it shows clear. I am afraid that filters can change or absorb the desired taste.

I've got the Mini Jet filter which is the baby brother of the first filter shown. It works great, but the filter pads are exorbitantly expensive. I haven't found an alternative pad. I now use a Harris filter that takes one Crystal-brite pad and looks like a flying saucer. It is gravity fed, but it does a great job. It is critically important that you de-gas your wine before adding a clearing agent. Filtration is only beneficial when your wine is already clear with zero sediment. Also, only bother polishing your wine if you are entering a competition or giving your wine away to someone you love.

Most filter companies outline putting the sheets in the filter dry and running water through the filter "In pumping direction" for 5-10 minutes to flush the sheets before use... Why are you just dipping them in water?
George, Chase made a statement that got me thinking. He mentioned that citric acid is not microbial friendly. I’m curious if it should be used then in those instances when I need to lower my pH? Is there a better acid that I should be using to try and get down to 5.2?
How do you get the remaining wine in the filters to push throw once the batch is finished? I always have remaining wine leftover over that goes to waste.
The only thing you could do is run water through, but the majority just put that last bit down to waste (look at it as the same way we lose a little due to sediment loss)
I have the medium and he sanitized his equipment and plate with star San and dunk his filter plates in just water....the question is can I dunk my filters in and soak them in star San or do I just dunk them in water
