Dive into the final episode of our four-part series with Bill, 'The Flavor Guy.' Bill tests out the Cuisinart Soft Serve Ice Cream Maker with a decadent recipe for strawberry ice cream!!

Freezing Time and Bowl Preparation: The freezer bowl must be completely frozen before you begin your recipe. Before freezing, wash and dry the bowl. In general, freezing time should be a minimum of 12 hours. To determine whether the bowl is completely frozen, shake it. The cooling liquid is frozen if you do not hear the liquid moving.
NOTE: The Bowl will begin to defrost quickly once it has been removed from the freezer. Use it immediately after removing it from the freezer.
Soft Serve Base: Pour two cups of heavy cream, half a cup of sugar (90 grams), and one tablespoon of @Nature’s Flavors Vanilla Extract into a bowl and mix until the sugar is dissolved. It may take some time for the sugar to dissolve due to the high fat content of the heavy cream. Chill the base in the freezer for 12 hours.
Strawberry Recipe & Instructions: For this recipe, it is recommended to use natural vanilla yogurts such as Chobani or Stonyfield. You will need two heaping tablespoons of vanilla yogurt for every 32 ounces of the mix. The lactic acid in the yogurt will help intensify the strawberry flavor.
Once you finish that step, prepare the strawberry recipe by making a strawberry variegate or puree with fresh strawberries and sugar. Once finished, press the juice from the strawberry variegate and pour it into a separate bowl. The juice will not only add color but also enhance the flavor of the ice cream. Pour the juice into the base. This will improve the texture of the ice cream and also affect how the ice cream will freeze. To further enhance the flavor, spoon in some of the strawberry puree or add it to the top of your ice cream.
Add 3 grams of NF-2827 strawberry flavor concentrate to the soft serve base. Pour the mixture into the soft serve machine and push the dispensing handle up to avoid leaks. Finally, place a cup underneath the machine to catch any spillage.
Soft ice cream will be finished in as little as 20 minutes. The time will depend on the recipe and volume of your dessert. If ingredients are refrigerated, ice cream-making time will be reduced.
