MAKASSAR, INDONESIA - Welcome to Makassar, on the island of Sulawesi in Indonesia. This is a city I’ve always wanted to visit because they are famous around Indonesia for their beef rbis and varieties of meaty soup. Let’s go try them out!
First of all, I tried Makassar food a few times many years ago in Jakarta, and from that moment I knew I wanted to go to the source to visit Makassar one day. So finally the time has come, let’s see what the food in Makassar is all about!
Konro Karebosi (maps.app.goo.gl/bXwBpAkedEdtq...) - There’s no restaurant and dish more famous in Sulawesi than Konro Karebosi, for their beef ribs cooked 2 ways. They grill them with sauce and peanut sauce (konro bakar) and they serve them with soup (sop konro). When I was in Jakarta I tried it out many years ago, but it was so cool to be at the source, at the original location in Makassar.
RM Ranggong Coto Makassar (maps.app.goo.gl/3LqgTPa6DDenQ...) - Another dish thats famous around Indonesia, that’s from Makassar is a beef soup with organs called Coto Makassar. I met up with my friend Ficky - Kuliner Jajanan Makassar ( / nganre_rong ) to try it out!
Pallubasa Serigala (maps.app.goo.gl/vQekyhovpm4mu...) - I was expecting to love the grilled beef ribs of Makassar, but what came as a total shock and surprise, was Pallubasa, another Makassar beef soup made with dried fried coconut. It’s one of my new favorite meat soups on earth.
Sop Saudara Irian (maps.app.goo.gl/rzsNSdhYMdbrW...) - Makassar doesn’t joke around when it comes to meat soups. And there yet another variation that you need to try when you’re in Makassar; Sop Saudara. To me this was more nutty and thicker than the other versions, containing peanuts and even noodles in their recipe.
Makassar is one of the greatest food cities in Indonesia, and especially if you love meat, you will love Makassar!

this is why we love rice so much, our dishes are very strong in flavour, can be very oily, very spicy, very complex and heavy and the rice elevate it by toning it down. i know it sound weird but thats how it is imo

As an Indonesian, i can confirm that those foods are legit and very delicious, I've been to Makassar several times, and those places are the most well known culinary spot in Makassar, While I'm in Makassar last year I gain weight just by eating Coto, Pallubasa, Sop Sodara and Much more, very glad Mark likes it the way I do 😁, Cheers Mark, Hope you visit Yogyakarta the next time you went to Indonesia 🇮🇩

I wonder what Mark would think of Jogja food since he doesnt like his food that sweet and Jogja foods are known to be sweeter (although still very flavorful, as are the general Javanese food) than a lot of the other Indo cuisines.

Makassar often is overshadowed by Bali or Jakarta. But it is actually one of the greatest destination for travel. Great food, very different from Java, and many great attractions!

mark so sirius about the sambal. its rare for foreigner can handle it spiciness, because Indonesian sambal can burn your tongue and make stomach ache. even many korean say that Indonesian sambal is the next level. Maybe only the Mexicans who can handle the 'same level' of the spiciness.

Oh, I was in Makassar for a few days over 15 years ago. Back then I remember they were trying to make it a tourist attraction, hence one of the reasons it was hosting a round of the Asia Pacific Rally Championship.

From what i learn about coto makassar history, long time ago only kings and their relatives can eat the "meat" part of the beef/buffalo, since it's an expensive food. And for the majority people they got the intestines and organs to made coto. Coto makassar might look as a thick soup but the taste is light. So thats why people do costumize the coto with sambal, lime, kecap manis and salt as their prefered taste. U can find few contwiners on the table that contain the stuffs to elevate and adjust coto taste for costumers. For Sulawesi Island we also known for our seafood and fresh water food. I mean wherever u go to any province in Sulawesi u'll find awesome Seafood, fresh water and beef (also pork for north sulawesi) dish. And in south sulawesi we love to use nut in our dish, such as Coto, Konro, Grilled Milkfish(peanut sambal), Kapurung/pugalu/bugalu use peanut(sometimes candlenut) for the broth etc. Enjoy the city Mark. “One of the greatest beef soups I’ve ever had” - Mark. Same here Mark. Pallubasa Serigala is on its own. It doesn’t compete. It’s God-tier level of food. As an Indonesian, this is easily my top 3 Indonesian dish. The taste of the soup is just mindblowing. I remember the first time I went to the exact same store, I ate 2 bowls of Pallubasa with 10 plates of rice 😂 Thanks for visiting, makes me want to go back there and experience it again

Mark, Pallubasa is really on another level. I always get 2 portion of serving while i was in Makassar! And you were right, the taste of it will be on your brain for long time, even i always craving for it after get back from Makassar. For me, that's the real deal. Can't get enough of that!

I was thinking the same thing. There's a restaurant in Memphis Tennessee called Dyer's Burgers and they've been using the same oil for deep frying their burgers for a over a century! You eat there you're tasting history. Same with this place and that pot of soup.

for anyone wondering at 1:32 . it was the small piece of meat that was still attached to the lard, it was hanging off the main piece of meat, because they didn't cut it into small pieces the movement rotates like almost 360 degrees, there's no way a cockroach or bug could do that even though they fly, you can see the fat that makes the little meat hang

Mark, I hope that you got to try more than one Coto Makassar restaurant, because there are many varieties, and they taste totally different from one another. There is one with coconut milk, one with strong nutty flavour, etc. It wouldn't do justice to just eat one type of Coto Makassar.

Hi Mark if you already in Sulawesi Island , definitely you need to go to Manado. It is well known in Indonesia that the spiciest Indonesian dishes are from Manado.

Indonesia has the best Fried Duck on Earth : Bebek Madura the best grilled chiken on earth : Ayam bakar Taliwang the best beef dish on earth : Rendang beef the best soup on earth : Rawon and Konro Soup , soto the best fried Chicken on earth : Ayam penyet the best skewer on earth : Sate maybe every provinces in indonesia has at least one dish that the best on earth ... what u guys wants more? haha lol
