Oh my dear Rachel, you have both Johnny and me smiling ear to ear as I had to show him this recipe. Eggplant parm is one of his favorite dishes and I sincerely love this quite healthy version of this dish. Now that I can buy Impossible Beef by the pound, it will be perfect to use as the meat in this dish. It has a wonderful taste especially once the spices and tomatoes will go in. Hi Rachel, I like your version of eggplant parm.. Being Italian, our version is somewhat different but I like your version. You could also put a thin layer of ricotta between the layers. That is very good, as well. Another great recipe. Take care🤗

Hey Rachel, this looks delish! My Dr's want me to eat a Mediterranean Diet, so all this would work great into it! I wonder if u could chop the eggplant into chunks, cut back on the meat and put it on top of a Grilled Fish? I would love it if u could give us more fish recipes + it's a tender, easy to digest meat. Thank you for another way to make eggplant I came from a large Italian family that made an eggplant casserole with hard boiled eggs and sauce all vegetarian. Don’t get me wrong ,it is delicious,but I love your eggplant parmigiana idea too. I’m going to try it as soon as the eggplant is ready to harvest from my garden. Meanwhile I might try to improvise with zucchini because they are here in abundance. Thank you again I love watching you 😊

The best eggplant parmigiana that I have ever had was in Sicily. Oh my goodness. It was baked, not fried, and served as a starter as a tiny casserole and not a main dish. I'll never get the chef's family recipe for his parmigiana but I love to play around with recipes. This one looks delicious. I've not had the dish served with a meat sauce but I know my husband will enjoy it. And, yes, I do want you to create a video featuring that lovely salad with homemade dressing!
