At today recipe, we are going to prepare two Fiorentina Steak.
One will be cook at traditional method and the one withing the Reverse Searing technique.
Reverse Searing core temperatures:
- Rare: 52C/125F (hoven at 60C/140F)
- Medium-rare: 55C/130F (hoven at 70C/158F)
- Medium: 60C/140F (hoven at 80C/176F)
- Medium-well: 66C/150F (hoven at 80C/176F)
- Well done: 72C/160F (hoven at 90C/194F)
I have not put any olive oil on the grill grades or on the Fiorentina, nor salt.
I personally prefere to let the meat fleavor profile to pop-up and allow my guest to adjust according to their taste.
